Green tomato caviar for the winter is prepared with onions, carrots and bell peppers. - 1.5 kg of green tomatoes;
- 1 kg of carrots;
- 0.5 kg of onions;
- 250 g bell pepper;
- 3.5 tablespoons of sugar;
- 1.5 tablespoons of salt;
- 1 cup vegetable oil;
- 2 tablespoons apple cider vinegar
- 3 teaspoons ground sweet paprika
- 1 head of garlic.
Method for preparing vegetable caviar from green tomatoes for the winter
To prepare caviar from green tomatoes, take a large baking sheet, the vegetables should lie in it quite freely, in one layer, otherwise they will be stewed and not baked. Wash the green tomatoes thoroughly, cut out the stalks, cut the tomatoes into four parts, put them on a baking sheet.
We peel the onion heads from the husk, cut into large slices. Add the chopped onion to the tomatoes.
Cut the pods of sweet pepper, remove the stalks with seeds, rinse the halves of the pepper with cold water, cut the pulp into wide strips. Place the chopped peppers on a baking sheet.
Scrape the carrots, wash them thoroughly, cut them into thin cubes, add them to the rest of the ingredients. Carrots take longer to cook than other vegetables, so you need to cut them thinner.
Put the garlic cloves peeled from the husk, pour in the vegetable oil. Use delicious and high-quality oil for the preparations; for this recipe for caviar from green tomatoes, you can mix cold-pressed olive with sunflower.
