If you also wanted to try homemade cheese for a long time, but did not dare … then let's get together and cook it together. Do you think making cheese at home is long and difficult? In fact, delicious cheese is prepared simply and in just a couple of hours. The main thing is to tune in (and try a little, since pulling the cheese takes some effort), and you will have delicious, and most importantly, guaranteed healthy cheese. This is not a cheesy product with a suspicious composition, which is full of store shelves. Our cheese contains only natural products: homemade cottage cheese and eggs, milk and butter.

Ingredients for making homemade cheese

  • 1 kg of homemade cottage cheese;
  • 1-1.5 liters of milk;
  • 2 eggs;
  • 100-150 g, depending on the fat content of cottage cheese, butter;
  • 1 tsp soda;
  • 1 tsp salt.

Method for making homemade cheese

Cooking cheese from homemade cottage cheese (did not try it from the store). For the cheese to be successful, you need to choose only real good quality cottage cheese.

We take a saucepan (not enameled), put cottage cheese in it, crumbling it with smaller hands, and fill it with milk. We put on a small fire. Stir occasionally with a wooden spoon, bring to a boil until the whey separates, but do not boil. This way we remove excess liquid from the curd to speed up the melting process.

We filter the curd mass through a colander, having previously lined it with gauze soaked in cold water (it is better to fold the gauze in several layers). We leave the mass to drain - let it stand for 5-10 minutes.

Using a meat grinder or blender, grind the resulting mass (the smaller, the better). We add soda to it - no more and no less than a teaspoon; then we put salt and eggs. It is better to take homemade eggs with bright orange yolks, then the cheese will be appetizing, yellowish. And if the eggs are store-bought, you can add a little turmeric - a healthy spice of bright sunny color.

Knead the mass well with your hands or with a silicone spatula.

Then there are two options for cooking: in a water bath or in a saucepan with a thick bottom. Mix the curd mass with butter and transfer it to a bowl, which we put on a saucepan with boiling water. We melt the cheese for about 10-15 minutes, stirring continuously with a wooden spoon.

Then we begin to draw out the contents of the bowl with a spoon - another 5-10 minutes, until a homogeneous mass without lumps is obtained.

Put the finished cheese into a mold greased with sunflower or butter, tamp it slightly to distribute it evenly, and leave it to cool.

Chilled cheese can be flipped from bowl to plate. If it doesn’t shake out - help slightly with your hand or a spatula, the cheese already holds its shape well.
