Fish in batter with beet puree is perfect for a festive table. Fish batter is prepared in different ways, each housewife has her own secret recipe. In my opinion, the most delicious batter is obtained with whites whipped into a cool foam, such a batter keeps its shape well, the pieces of fish are neat and identical.
The fish that I used in this recipe is well known - notothenia, from the perch family, with white and firm flesh.
For a side dish with fried fish, I advise you to cook a tender beet puree with Greek yogurt. Spicy fish and cool, refreshing beet puree harmonize well and complement each other.

Ingredients for fish in batter with beetroot puree
- 400 g of sea fish;
- 250 g beets;
- 120 g Greek yogurt
- 30 g green onions;
- 230 ml of deep fat oil;
- salt, a few peas of black pepper.
For batter:
- 1 egg;
- 35 g wheat flour;
- 25 ml ice water;
- salt, ground paprika.
Method of cooking fish in batter with beet puree
Any sea fish can be cooked in batter, as the delicate dough envelops the fish pulp, the hot oil seals it all tightly, not allowing moisture to evaporate.
I cooked nototenia, its flesh is dense, there are few bones. We clean the fish of scales, make an incision along the ridge, remove the skin. We make another incision deep and along the spine, separate the fillets, carefully remove all the small bones.
Dip the fish fillet with a napkin, marinate in a mixture of ground black pepper and salt for 15-20 minutes. During this time, you can just make a lush batter.
We mix the egg yolk with flour, salt and ice water, the mass should be thick, homogeneous without lumps. Beat the protein separately until soft peaks. Gently mix the proteins into the batter. Put a bowl of dough in the refrigerator for 10 minutes. The batter must be cooled, this is the secret of success!
Fill a deep-frying pan with a thick bottom and sides. We heat the oil up to 150 degrees. Pieces of marinated fish are breaded in flour, then immersed in batter, and carefully immersed in butter. If your deep fat is well heated, then characteristic bubbles form around the dough and it will brown beautifully.
Put the pieces of finished fish on a napkin, which will remove excess oil, then sprinkle the fish with ground paprika.
We prepare tender beet puree for spicy fried fish in lush batter as a side dish. Boil sweet beets in their skins until tender, cut into slices. Add Greek yogurt and salt. We send the ingredients to the blender.
Season the finished beet puree with finely chopped green onions. The taste of this puree is very reminiscent of the taste of a summer chiller - the same fresh, with a slight sourness.
