Method of preparing fish salad with celery and rye flour biscuits
First, let's prepare rye biscuits. To do this, cut butter (cold) into small cubes, add seeds, rye flour, oatmeal and yolk to it. Knead the tough dough with your hands until the ingredients come together in a tight ball. Roll out the dough thinly on a floured board, cut out a Christmas tree cookie mold.

We lay out rye biscuits on a dry baking sheet, prick with a fork. The biscuits contain a lot of butter, so you don't need to grease the baking sheet. We bake for 12-16 minutes. The baking temperature is 170 degrees Celsius.

We clean two small mackerels from the entrails, cut off the heads, boil for 15 minutes in salted water with roots and spices, cool, remove the bones. Mix the ready-made mackerel with onions fried in butter.
Peel a small piece of celery root, rub on a coarse grater, fry in vegetable oil for 5 minutes, add to mackerel and onion.

While the fish and vegetables have not cooled down, add melted cheese, cut into large pieces, to the salad. In a warm salad, the cheese will melt and evenly distributed among the rest of the ingredients.

Add boiled and finely chopped quail eggs, thin leeks, peas, halved olives and mayonnaise to the fish salad.
I advise you to season the fish salad with homemade mayonnaise, the taste will be simply delicious. Homemade mayonnaise does not contain preservatives, there are no chemical additives in it, moreover, you can independently adjust the amount of salt and sugar.
Stir all the ingredients of the fish salad, add salt if necessary, spread the fish salad in a slide on a serving plate. Decorate a hill of salad with parsley, halves of black olives.

Serve festively decorated fish salad with celery along with biscuits made from rye flour. Bon appetit and Happy New Year!
