Probably, many of you have encountered this problem - the bananas have darkened and become completely soft, it is a pity to throw them out, and the fruit does not look very appetizing. If you bake this recipe once, then never throw away overripe bananas again. The muffin recipe is said to come from Brooklyn, where it is called banana bread. I don't know if this is true, since bananas are added to baked goods in recipes from different countries, but whoever came up with this is just great. The banana cake turns out to be very fragrant, slightly moist, it can be soaked in syrup, garnished with any cream, in general, it turns out to be an excellent dessert that is prepared quickly and is eaten without residue.

If the bananas have become soft and darkened, and there is no time for baking at all, then freeze them directly in the peel, bananas do not lose their taste or aroma when frozen.

Banana cake ingredients
For the test:
- 2 bananas;
- 2 eggs;
- 100 g sugar;
- 80 g butter;
- 30 g cocoa powder;
- 160 g wheat flour;
- 4 g of soda;
- cloves, ground cinnamon, star anise, cardamom, almonds, peanuts.
For impregnation:
- 3 tangerines;
- 60 g sugar.
For decoration:
- 50 g icing sugar;
- 1 chicken protein;
- food paint.

Banana cake preparation method
Making the dough. Mix soft butter with sugar until a lush cream is formed, then beat two eggs in turn.

Eggs are placed in the creamy mass in turn, since if you add them immediately, the butter can curdle.

Beat the overripe bananas in a blender until puree, add to the mixture of butter, sugar and eggs. By the way, darkened bananas can be placed in the freezer and thawed before baking.

Cooking dry ingredients. We mix wheat flour, cocoa powder and soda. Grind the nuts in a mortar (I had almonds and peanuts, but you can take any nuts you like), then grind the spices - star anise, cloves, cardamom seeds. Add nuts, spices, ground cinnamon and grated nutmeg to the flour. Add nutmeg to baked goods with care; 1/4 of a small nut is enough for this cake.

Mix flour with liquid ingredients, knead the dough well so that no lumps remain. Add the zest of three tangerines to the dough, and leave the fruit for the preparation of the cake impregnation.

We cover the 10x20 centimeters form with baking paper, spread the dough, heat the oven to 165 degrees Celsius.

We bake the cake for 40 minutes, take out their ovens, remove the paper, cool on the wire rack.

Peel the tangerines, divide them into slices (you can cut them), add sugar, cinnamon and star anise. Cook the syrup for 10 minutes over medium heat, then saturate the still warm cake with it. The tangerines in this recipe can be replaced with lemons or oranges, and the remaining syrup will always find its use, you can make a cocktail with it.

Mix the egg white with the powdered sugar, add the yellow food coloring, and decorate the banana cake.
