I, by a sinful deed, laughed at this recipe until I tried it myself. It would seem that what is so special about it - breaded boiled cabbage. But try it, it will turn out incredibly tasty. If you are not going on a date or service, then pour sour cream over the hot dish and sprinkle with fresh green onions!

Ingredients for Vegetarian Young Cabbage Schnitzel
- 1 small fork of young cabbage;
- 2 chicken eggs;
- 50 g wheat flour;
- 100 g bread crumbs;
- 50 ml of vegetable oil for frying;
- salt.
Method for preparing vegetarian schnitzel from young cabbage
Cut a fork of young white cabbage in half. This dish can be prepared with late cabbage, but only with individual leaves. The late vegetable cannot be quickly boiled in a head of cabbage, and the dish will lose its zest.
Cut the halves of the head of cabbage in half or into three parts, depending on the size. We do not cut out the stump completely. Try to show miracles of virtuoso cutting and leave a thin piece of stalk so that the cabbage leaves do not scatter during cooking.
In young vegetables, the stalk is tender, it will cook in the same way as the leaves.
We put the chopped pieces into a small saucepan, add 1-2 teaspoons of table salt, pour boiling water so that the water completely hides them.
Cook for 6-7 minutes after boiling over medium heat. Gently take it out, put it on a sieve or colander so that the glass water and the pieces cool.
First, we bread the cabbage in wheat flour. Any breading usually starts with this. If for some reason you do not want to add flour to the dish, then at this stage it can be replaced with potato or corn starch.
Mix raw chicken eggs with a small pinch of salt, stir the eggs with a fork so that the whites and yolks come together.
Dip the cabbage breaded in flour into the egg mixture.
Next, put the cabbage in the breadcrumbs, roll on all sides so that the crackers completely cover the vegetable. You can make crackers at home in the oven. To do this, cut the loaf into small cubes and dry it in the oven until golden brown at a temperature of about 120 degrees Celsius. Then grind the loaf in a food processor.
Heat 2-3 tablespoons of olive oil in a non-stick skillet or cast iron skillet, fry the schnitzels in turn until golden brown on each side. In our case, the cutlet has three sides.
Serve schnitzels to the table hot, pour sour cream, sprinkle with fresh herbs. Bon Appetit!
