Oven yeast pizza with ham and pancetta is a delicious homemade pastry that is loved and prepared all over the world. Pancetta (a type of bacon) - fatty pork belly dried with salt and herbs with layers of bacon and meat. This spicy addition gives the finished pizza a unique flavor.

A simple pizza dough is made with three ingredients - water, yeast and flour. To make it elastic, add a little high-quality olive oil, which is desirable, but not necessary. The dough can be prepared in a larger volume by proportionally increasing the amount of ingredients indicated in the recipe. It can be stored in the refrigerator for 10-12 hours, and an hour before cooking, take it out of the refrigerator, wrinkle it, and leave it in a warm place so that it comes up again at room temperature.

Pizza dough:
- 7 g dry yeast;
- 185 ml of water;
- 300 g wheat flour;
- 3 g salt;
- 15 ml of olive oil.
Pizza filling:
- 100 g ham;
- 40 g pancetta;
- 50 g of Mozzarella cheese;
- 50 g of hard cheese;
- 70 g cherry tomatoes;
- 40 g leeks;

Pour wheat flour on the working surface, add fine table salt without additives and dry yeast. We make a depression in the center and slowly pour into it pure water heated to 35 degrees Celsius and extra virgin olive oil. Mix the ingredients with our hands, then knead the dough until it stops sticking to the surface.
Lubricate the bowl with olive oil (so that the dough does not stick), put the bun in the bowl, cover with a clean, damp cloth and put it in a warm, secluded place without drafts.

Leave the bowl warm for 45-50 minutes, during which time the dough will double in volume.

Knead the dough, roll out a round cake with a rolling pin on a board sprinkled with wheat flour to a thickness of about half a centimeter. We wind the cake on a rolling pin, transfer to a dry baking sheet.
