Tomato soup with sausages is a hearty, thick, delicious soup made from vegetables in meat broth. It is good to cook such a soup on a cold autumn day, from vegetables ripened in the beds under the sun, it will turn out to be very fragrant, with a rich taste.
Of course, the soup can be served without additives, but the sausages in it are so handy that it is not necessary to prepare the second dish for dinner.
As a child, when my mother had no time to fiddle with meat or chicken, she added doctor's sausage cut into small cubes to my children's soup. Perhaps, at an early age, everything seems tasty, but this recipe, originally from childhood, fell in love with my homemade ones, and now, when time is running out, I cook it for my daughter.

Ingredients for Tomato Sausage Soup
- 1.5 l of meat broth;
- 300 g doctor's sausages;
- 500 g red tomatoes;
- 150 onions;
- 300 g zucchini;
- 300 g potatoes;
- 100 g sweet bell pepper;
- salt, sugar, vegetable oil, ground sweet paprika, basil.
Method for preparing tomato soup with sausages
This delicious homemade soup can only be prepared with homemade meat broth. Of course, if there is no time at all, and the bouillon cube comes off. However, it is better to keep the ready-made broth in the refrigerator or freeze it - it helps in an emergency.
So, remove the frozen fat from the broth. You do not need to throw it away; it is useful for frying or browning vegetables.
In a soup pot, heat 2-3 tablespoons of odorless vegetable oil, throw in finely chopped onions, add a little broth.
Pass the onion until transparent.
If you just fry the onion in oil, it can overcook and turn into chips, and for the soup you need a caramelized onion - soft, tender, transparent.
Grind ripe red tomatoes in a blender until smooth, then rub the puree through a sieve directly into the pan.
Fry the onion with tomato puree for a few minutes.
Peel the zucchini from the peel and seeds, cut into cubes. Add the zucchini to the pan to the onions and tomatoes.
Wash the potatoes, peel them, cut them into small cubes, throw them into the pan after the zucchini.
We clean the sweet red pepper from seeds, cut it finely, add to the rest of the ingredients.
Next, add the remaining broth or pour boiling water and throw 2-3 broth cubes into it.
Bring to a boil, cook for 30-40 minutes, until the vegetables are completely soft. At the end, salt to taste, add 1-2 teaspoons of granulated sugar and ground sweet paprika.
Grind the finished soup with an immersion blender until smooth.
Cut the doctor's sausages into small round slices, put them in a saucepan, and bring them to a boil again.
Serve hot tomato soup with sausages to the table. Before serving, sprinkle with fresh basil, it goes better than any other greens with the taste of tomatoes.
