Pork Fajitos is a spicy Mexican appetizer that consists of a meat stew with vegetables, chili and fresh salad. Traditionally, all the ingredients are wrapped in a round flatbread made from wheat or corn flour - a tortilla that should not be confused with the Spanish tortilla (omelet with vegetables). In Mexico, fajita is served separately - meat, chopped vegetables and tortillas, and you independently assemble your own version of the dish. To prevent the guests from self-righteous, I collect fajits myself, because if the process is not controlled, a heap of sliced salad and not a crumbs of meat stew will remain on the table. You need to collect fajitos just before serving, so that the cake does not get wet.

Ingredients for pork fajitos
- 4 tortillas (thin wheat flour cakes);
- 400 g lean pork;
- 100 g of onions;
- 2 cloves of garlic;
- 150 g tomatoes;
- 2 pods of red chili
- 3 g hot red pepper;
- 3 g smoked paprika;
- 20 ml olive oil;
- 50 g tomato puree;
- green lettuce leaves;
- salt, sugar, lemon.
How to cook fajitos with pork
We crush the garlic cloves with a knife, peel, chop. Finely chop the onion head. In a frying pan, heat high-quality olive oil, throw in the onion, then garlic, add a small pinch of salt, and saute until transparent.

Cut the pulp of lean pork into thin and long sticks across the fibers. This dish cooks quickly, so fatty pork will not work, it will turn out tasteless.
We send the meat to the pan to the browned onion, fry for 4-5 minutes.

Cut the tomatoes into thin slices, add to the meat and onions. If you are not lazy, you can peel them off, but this is not necessary.

Now add the tomato puree, add ground hot red pepper, smoked paprika and fresh chili pods. Cut the chili in half lengthwise, add it along with the seeds - this is Mexican cuisine!

Pour table salt without additives to taste, and to balance the taste, a small pinch of sugar, simmer everything together for 10-12 minutes, remove from heat.

By the way, tortillas (tortillas) are very easy to make at home. All you need to do is mix three cups of flour with a small piece of margarine, salt, baking powder and a glass of hot water. Knead the dough, roll out round tortillas and bake them in a dry skillet. It is not necessary to deeply fry, cook for about a minute on both sides! The cakes should be pale with light brown specks.

Put the pork stew on the flatbread, pour abundantly with thick sauce from the pan, add the chili pods.

Put fresh lettuce leaves, pour freshly squeezed lemon juice over everything, add a slice of lemon and serve immediately.

From the history. Fajita and burrita are the closest "relatives", the only difference is in the way of serving and cutting the ingredients. In the first case, the meat is cut into thin strips, which, in fact, gave the name to the dish. In Spanish, faja is a strip, since the cowboys were given cuts of meat, which they cooked and wrapped in unleavened corn cakes.
