Soup with pumpkin, beans and pork ribs is a delicious, rich and thick first dish, which is best prepared in late autumn or winter, when the harvest is harvested, it is cold and uncomfortable outside the window, you want to warm up, eat something hearty. You can take any ribs - pork, veal, lamb, the cooking time will differ slightly, but not significantly. Young beans are tender, they do not need to be soaked and cooked for a long time, they will cook at the same time as other vegetables.

If you had to cut a large pumpkin to make the soup, then the question arises, how to save the cut pumpkin? Cut off the peel with a sharp knife, remove the seeds, wrap the pulp in foil or cling film. A vegetable packed in this way will be stored in the refrigerator compartment for 10 days. You can also cut the orange pulp into small cubes, place in portioned bags and freeze.

Ingredients for Pumpkin, Bean and Pork Ribs Soup
- 600 g of pork ribs;
- 500 g pumpkin;
- 300 g potatoes;
- 150 g of young beans;
- 80 g of onions;
- 80 g carrots;
- 60 g tomato puree;
- celery, garlic, salt, oil for frying.
Method of making soup with pumpkin, beans and pork ribs
Cut the pork ribs along the piece. Pour 2.5 liters of cold water into a saucepan, put ribs, add a bunch of celery with roots, 2-3 cloves of garlic, bay leaf, salt to taste. After boiling, remove the scale with a slotted spoon, close the pan with a lid, cook on low heat for 45 minutes - 1 hour.

While the meat is cooking, prepare the vegetables. We clean the pods of young beans, remove the beans. Instead of fresh beans, you can take a can of canned beans or boil dry beans in advance until tender.

Remove a thin layer of skin from the carrots with a vegetable peeling knife. We rub the carrots on a coarse grater.

Remove the husk from the onion head, chop the onion finely.
In a frying pan, heat a tablespoon of refined vegetable oil for frying, sauté finely chopped onions and grated carrots for 6-7 minutes until soft.

We peel the pumpkin, remove the seed bag with seeds with a tablespoon. Cut the pulp into small slices.

Peel the potatoes and cut them into cubes.

When the meat is ready, we take out a bunch of celery from the pan - it has fulfilled its function and will no longer be needed.
Put peeled beans, chopped potatoes, pumpkin slices and sautéed onions with carrots into the pan. Add tomato puree or thick tomato sauce.
Bring to a boil, cook over medium heat for 30 minutes.
At the end of cooking, salt to taste, season with freshly ground black pepper.

Remove the finished soup from the stove, cover the pan with a towel, leave for 20 minutes so that the vegetables are better steamed.

Serve soup with pumpkin, beans and pork ribs with sour cream and fresh herbs, put the ribs on a separate plate. Bon Appetit!
