The recipe for apple soup, mysterious and tempting, has interested me for a long time, but I was somehow afraid to cook such a strange dish. Apples are somehow more customary to put in compote, and not in soup! What if the taste of the original soup turns out to be as specific as the cucumber lemonade? Still, I mustered up the courage and tried to cook half a portion. And … the next day, the recipe was repeated! Because the apple soup turned out to be delicious, and even very good!
Imagine warm applesauce with a silky, creamy taste and a light cinnamon aroma, gently enveloping and melting imperceptibly in your mouth! This is what apple soup is - although it is more correct to attribute it not to the first courses, but to desserts, like the strawberry soup that we cooked in the summer. And in autumn, during the apple season, I recommend you try this interesting dish.
Ingredients for Apple Soup Dessert with Apple Chips
- 2 medium apples;
- 30 g butter;
- 1 tablespoon sugar
- a pinch of salt;
- a pinch of cinnamon;
- 100 ml of milk;
- 100 ml cream 10%;
- 1 tablespoon lemon juice
Apples of green or white, sweet-sour varieties are best suited: Antonovka, Simirenko, Golden, Granny Smith, and I cooked with Snow Calvin.
Method of making apple soup dessert with apple chips
Wash the apple, cut it in half or into quarters, peel it from the cores with seeds and partitions, as well as from the peel - if you cook peeled apples, the soup turns out to be more tender. Cut the apples into small pieces (1.5-2 cm) of any shape.
For cooking, you need a thick-walled pan, such as a cast iron or a small diameter saucepan. Put a piece of butter in it and heat on the stove until melted.
Pour sugar into the melted butter and continue heating over low heat, stirring all the time with a spoon. As soon as the mixture starts to boil and is about to caramelize - bubbles appear - add apples.
We continue to cook, stirring occasionally, for 4-5 minutes.
And while the pieces of fruit are languishing in a cauldron, you can fry a couple of apple slices in parallel for decoration. "Wow, first apple soup, now fried apples too!" - you say. But try frying a thin, luminous slice in butter on both sides!
It turns out a delicate delicacy, a bit like sweet chips and baked apples at the same time.
When the apples become softer, like stewed, add lemon juice, mix.
Combine cream and milk.
Add to apples, mix. Continue heating, and when the soup starts to boil, turn it off immediately.
Puree hot apples with cream using a blender, adding a little cinnamon. What a wonderful scent immediately envelops you!
As soon as possible, we shift the dessert into a plate, decorate with a slice of fried apple …
