I really love English cuisine, and especially, savory dishes with dough - puddings and pies. The baked kidney pudding that I suggest you make is somewhat different from the classic recipe, but the result exceeds expectations. We will not cook the pudding for several hours in a saucepan of water, since using the oven you can get this dish much faster. And the kidneys do not need to be cooked for several hours, pre-soaking them for a day - leave these prejudices to our grandmothers. But do not be lazy to melt the kidney fat, the classic British pudding can only be cooked with it, because without kidney fat the dough will be completely different.

You can add mushrooms, pieces of fried beef to the pudding, or, as in old British recipes, add a few oysters to the pudding. You can make white mushroom sauce with beef broth and pour over the finished pudding.

Kidney Pudding Ingredients
- 1 kg of beef kidneys;
- 2 red onions;
- 3 tablespoons finely chopped parsley
- 2 eggs;
- 30 g wheat flour;
- 1 tablespoon cornstarch
- 150 ml of milk.
Method of making kidney pudding
One fairly large beef kidney weighs about a kilogram. We rinse the kidney with running water. Put in a saucepan with fresh, cold water. We change the water periodically. Soak for 2 hours.

Divide the soaked buds into slices. In the middle of the kidney, you will find quite large deposits of kidney fat and ducts. The fat must be carefully cut, it will come in handy. You can, of course, make a pudding with butter instead of kidney fat, but the taste will not be the same.

Cut the kidney fat into small cubes and place in a greased saucepan. We melt the fat over the smallest heat. You will get about 60-70 grams of pure fat, which, when cooled down, will be useful for the test.

We put the kidneys divided into slices in cold water, add any spices: garlic, herbs, pepper, bay leaf and salt (importantly, always cook offal in plenty of water). Cook the kidneys for 10 minutes, after boiling, and then put them in a colander and rinse with cold water. Filter the kidney fat to remove the greaves. So, ready-made semi-finished products for our pudding.

Fry red onion in a tablespoon of kidney fat, cut the kidneys into small slices. Put the kidney, onion and parsley in greased with kidney fat.

Cooking the dough. Mix two raw eggs and the remaining kidney fat, add flour, salt, starch and milk. The dough will turn out to be quite liquid, mix it thoroughly so that small lumps disappear.

Fill the kidneys with liquid dough. Make sure that the form is not filled to the brim, as the pudding rises in the oven and can "overflow".

Preheat the oven to 160 degrees and bake the kidney pudding for about 20-25 minutes on the middle shelf.

Ready-made kidney pudding can be eaten hot, but it is delicious and cold. If the pudding is completely cooled, then it can be cut into neat portions.
