Homemade chicken roll in the oven from chicken breast, legs and hearts is not difficult to cook. The main feature of the recipe is spices and seasonings. Fennel, smoked paprika, garlic and dried chili are successfully combined with chicken, and dried carrots will decorate the product not only with taste, but also add beauty. New Year's recipes do not have to contain the rarest overseas ingredients; often the most commonplace products turn out to be a culinary masterpiece, if you also try to cook with love.

To make a homemade chicken roll, you will need quality baking parchment and foil. Choose wide rolls, it is easier to pack minced meat in them.

Ingredients for homemade chicken roll in the oven
- 1 chicken breast;
- 2 legs;
- 0.35 g hearts;
- 2 tsp dried green chili;
- 2 tsp smoked paprika;
- 1 tsp fennel seeds;
- 2 tbsp. l. dried carrots;
- 3 cloves of garlic;
- 150 ml milk or cream;
- sea salt.
How to cook homemade chicken roll in the oven
We will prepare meat products - we will thoroughly wash everything, remove excess, dry it. Choose a medium sized chicken breast and two large hams. Instead of two hams, you can take four thighs. The combination of white and red meat in such proportions gives a great taste.

Remove the skin from the breast and legs. With a sharp knife, cut off the meat from the bones. Chop the skin finely, as it is rather difficult to grind even in a powerful blender. We cut the white meat coarsely, remove the veins and tendons from the red meat, and also cut into large cubes.

We send the chopped meat and chicken from the blender, add the peeled garlic cloves and milk. Grind the ingredients until you get a smooth, homogeneous minced meat.
Put the minced meat in a deep bowl.

Next, add seasonings and fillers. First, add sea salt. I put 4 teaspoons of coarse sea salt (without a slide) for so many ingredients, but each has its own taste.
Then add smoked paprika flakes and dried green chili. Heat the fennel seeds in a dry frying pan, crush them a little in a mortar, add them to the minced meat.

Cut chicken hearts, remove blood clots, cut off all unnecessary. Then cut the hearts into thin slices, add to the minced meat bowl.

Pour the dried carrots into a bowl. I advise you to use dried carrots, which, when baked, will become bright, retain their taste, and will look festive and appetizing in the context of a roll.

We take quality parchment for baking. Grease the glossy side of the paper with olive oil. We spread the minced meat on paper.

We fold the paper together with the contents, form a thick and long "candy". Then we pack the roll in several layers of food foil, roll the edges of the foil with a tourniquet.

We heat the oven to 160 degrees Celsius. Place the chicken roll baking sheet in the center of the oven. We bake for about 1 hour.
We leave the chicken roll in the package until it cools completely.

We unfold the foil and paper, cut the chicken roll in portions and serve it to the festive table.
