Beef soup for the daily menu is a hearty first course that doesn't require much hassle. The beef takes a long time to cook, but does not require attention: put the pan on the stove, and you can go about your business, just do not forget to turn on the timer. Then we chop the vegetables, pour the broth and, after about half an hour, the beef soup is ready. Usually cabbage soup, soups and borscht are cooked with white cabbage. Once, when it was not at hand, I added Peking beef soup to the soup. Since then, this is the only way I cook - during the cooking process in the kitchen there is a completely different smell, and the taste of the finished dish is different, in my opinion, for the better.

So that, in addition to a delicious first course, there is also delicious boiled meat on the table, prepare the broth the day before, leave the beef in a saucepan overnight. The meat will be tender and juicy.

Beef Soup Ingredients

For broth:

  • 1 kg of beef with bones;
  • 3 bay leaves;
  • a bunch of parsley;
  • 1 onion;
  • 1 carrot;
  • salt.

For soup:

  • 120 g of onions;
  • 200 g carrots;
  • 300 g potatoes;
  • 250 g of Chinese cabbage;
  • 150 g of stalk celery;
  • 15g fenugreek seeds;
  • 5 g oregano;
  • salt, vegetable oil, black pepper, herbs.

Method of making beef soup

Cooking beef broth. In this recipe I cook it from beef with bones, it takes a long time to cook, about 2 hours. Boneless beef will require less time (1-1.5 hours).

So, wash the meat, put it in a saucepan, pour 2.5 liters of cold water. Add the whole peeled onion, carrot, bay leaf and a small bunch of parsley. Add 2 teaspoons of table salt. After boiling, remove the foam, reduce the heat and close the pan with a lid. Cook for 2 hours.

Leave the meat in the broth for 30 minutes, then filter the broth, remove the meat from the bones, cut into cubes.

Making a vegetable base. Chop the onions finely. In a soup pot, heat any odorless vegetable oil (refined). Add onion, fenugreek seeds, oregano. Fry onion with spices until transparent.

Rub the carrots on a coarse grater, add to the pan when the onion is ready. Fry the carrots for 5-6 minutes.

Cut the celery stalks into cubes, put them in a saucepan, fry for 5 minutes along with the rest of the vegetables. Root celery can also be used to prepare this dish. It needs to be peeled and grated.

Put the Chinese cabbage chopped into thin strips. Instead of Peking cabbage, you can use white cabbage, however, Peking cabbage is better combined with beef.

We clean the raw potatoes, cut them into small cubes, and send them to the pan following the Chinese cabbage.

We turn off the gas, cook the beef soup for 40 minutes, the saucepan should not be closed tightly. At the end of cooking, add table salt and ground black pepper to taste.
