On a cool, cloudy day, the best meal for dinner is a hearty warming soup. Such as bean soup with ribs: you will eat, and you will warm up, and your mood will rise. Our soup is not simple, but from a mixture of beans: colorful, aromatic, rich! However, you can cook an equally delicious soup from ordinary beans. There are so many different types of it sold on the market - white, speckled, brown, and orange, and even huge lilac beans.
Imagine what a wonderful bean soup you will get from this assortment: not only delicious, but also beautiful. And if you spice it with a good piece of ribs with meat … then you won't need to cook the second one either!
Ingredients for Bean Rib Soup
For 2.5-3 liters of water you will need:
- 300-400 g of pork or beef ribs;
- half a packet of legumes (beans, peas, different types of lentils) or a glass of beans;
- 3-5 medium sized potatoes;
- 1 medium carrot;
- 1 medium onion;
- sunflower oil - 2 tablespoons. l.;
- salt - 1 table. l.;
- bay leaf - 2-3 things;
- ground black pepper or peas - according to your taste.
Method for making soup with beans and ribs
First, soak the beans or legume mixture in cold water. After lying for half an hour or an hour in cold water, the beans will cook faster.
Meanwhile, put the washed ribs in a saucepan with cold water, cutting them into portions. Bring to a boil, salt the first water and add new water.
Boil the ribs for 20-30 minutes with a slight boil under the lid, and add the beans to the pan along with the water in which we soaked them. Cook for another half hour, and while the meat and beans are boiling, prepare the rest of the ingredients.
Finely chop the onion and fry in sunflower oil - not until golden brown, but until lightly transparent.
Add the grated carrots and fry for another 2-3 minutes, until soft.
Peel the potatoes, wash and cut into cubes.
Now pour the carrot and onion frying and potatoes into a saucepan to the beans and ribs.
Salt, mix and cook the whole "company" together for about 15 minutes, until all the products are soft.
Then add pepper, bay leaf and turn off after two minutes.
