A simple but very beautiful and delicious festive dessert. Tartlets made of delicate and crumbly shortcrust pastry, filled with the most delicate and aromatic orange curd. You can decorate the cakes with whipped cream, fresh berries, pieces of fruit, or prepare an Italian meringue for decoration and sprinkle the cream with candied fruits.

Tartlets are prepared very quickly, the dough for them can be mixed in literally 5 minutes. Cooking an orange curd won't take much of your time either.
I advise you to cook this festive dessert in parts (bake tartlets separately, cook a Kurd separately), and you can collect and decorate the dessert before serving on the festive table.

Ingredients for Orange Kurdish Tartlets
Dough for tartlets:
- 80 g butter;
- 150 g wheat flour;
- 15 g sugar;
- 1-2 raw yolks;
- 2 g salt;
Orange Kurd:
- 1 orange;
- 3 tangerines;
- 1 lime;
- 120 g sugar;
- 120 g butter;
- 30 g potato or corn starch;
- 1 egg;
For decoration:
whipped cream and fresh cranberries
Method for making tartlets with orange curd
We make shortcrust pastry tartlets. In a deep bowl, mix cold butter, a little sugar (you don't have to add), wheat flour, salt and raw yolks in a deep bowl. You need to mix quickly so that the oil does not melt from the heat of your hands. Put the finished dough in a cold place for 15-25 minutes.
Sprinkle the board with flour, roll out the dough in an even layer of about 6 millimeters, cut into equal pieces. You can cut the appropriate size with a glass of thin glass or cut into rectangles with a knife.



We fill the tartlet molds with dough, gently press it, filling the voids, cut off the excess dough at the edges. We put the molds filled with dough into the refrigerator again, and in the meantime, turn on the oven to warm up to 180 degrees.

We take out the tartlets from the refrigerator, put small pieces of parchment or foil on the dough, sprinkle beans, peas or any cereal on them, this method does not allow the dough to rise and the tartlets will retain their correct shape.

Bake for 20 minutes, cool, remove from the mold.

Making orange curd with lime and tangerines. Pour some water into a stewpan with a thick bottom, add peeled orange, tangerines and lime. Remove the zest from the orange and lime, add to the rest of the ingredients.

Cook fruits for 10 minutes, grind with a blender, filter. Combine fruit puree with sugar, yolks and starch. Bring the mass until thickened over low heat, then stir with butter and let cool.

We fill the tartlets with orange curd so that the cream fills almost the entire basket.

Decorate completely cooled cakes with whipped cream before serving. If you decorate the tartlets with whipped cream in advance, they can blur and the cake will lose its attractive appearance.
