  • 20 g fresh yeast;
  • 1 tbsp sugar (if the filling is sweet, then 3 tablespoons);
  • 0.5 tsp salt;
  • 1 tbsp. warm water;
  • 1.5 - 2 tbsp. sunflower oil;
  • Approximately 3 tbsp. flour.

For the cabbage filling

  • ½ a small or ¼ large head of white cabbage;
  • 1-2 medium carrots;
  • 1 medium onion;
  • Salt pepper;
  • Vegetable oil;
  • Tomato paste - optional.

First, we make a dough for the dough. Chop the yeast into a bowl, add sugar, grind with a spoon, and when the grains of sugar and yeast melt, pour in half a glass of water (not hot, but warm, about 37 ° C - this temperature is most comfortable for the yeast, and the dough will rise well).

After stirring the yeast with water, sift a little less than a glass of flour into a bowl and mix well to make a thin dough without lumps.

We put a bowl of dough in a warm place - for example, on top of another bowl, a larger one, into which warm water is poured. Cover with a clean towel and leave for 15 minutes.

In the meantime, let's start preparing the cabbage filling. Peel the carrots and onions, remove the top leaves from the cabbage, wash the vegetables.

Chop the onion and pour it into a frying pan with heated vegetable oil. Fry, stirring, over medium heat for a couple of minutes, then pour the carrots grated on a coarse grater there. Mix again and continue to fry for another 2-3 minutes, in parallel with this, thinly chop the cabbage.

After adding the cabbage to the carrots and onions, mix well, reduce the heat and cover the pan with a lid - let the filling simmer until soft. Do not forget to stir so that the cabbage stews evenly and does not burn underneath. Shortly before readiness, salt the filling, pepper, you can put a couple of tablespoons of tomato paste - for color and taste: tomato gives a slight sourness.

We put the finished stewed cabbage into a wide plate to cool down - the yeast pie should not be stuffed hot: as you already know, yeast loves warmth. Therefore, the filling should be not only fresh from the pan, but also not from the refrigerator, but slightly warm or at room temperature.

While the filling is cooling, knead the dough. Dough has already approached, having doubled. Mix it and add the remaining half a glass of warm water, then gradually sift the remaining flour, stirring the dough. Along with the last portion of flour, add salt and pour in vegetable oil.

We put the spoon aside and continue kneading the dough with our hands - in a bowl or on the table, sprinkle with flour. The better you knead, the better the baked goods will be - even lean dough without eggs and butter is fluffy and tasty. If the dough sticks to your hands, you can add a little flour, or better, add a little more vegetable oil so that the dough is not too steep.

We will roll out the most part into a circle about 1 cm thick and a couple of centimeters in diameter larger than your shape. To prevent the dough from sticking, sprinkle flour on the table.

How to grease the cake to make it rosy? The classic option is a beaten egg. But, since our pie is lean, I propose to grease its top with very sweet strong tea (for half a glass of tea leaves - 1-1.5 tablespoons of sugar).
