Cupcakes will turn out to be tastier, more aromatic and brighter if you add spices to the dough. You can choose the spices to your liking, and I use this set:

  • 1 tbsp. l. lemon zest;
  • ¼ h. L. cinnamon;
  • a pinch of vanillin;
  • ¼ h. L. ground ginger;
  • ¼ h. L. ground nutmeg;
  • ⅓ h. L. turmeric;
  • a packet of vanilla sugar or vanillin on the tip of a knife.

Turmeric gives the muffins an even more intense sunny color, and the rest of the spices - a pleasant aroma. In addition, such supplements are very useful: turmeric strengthens memory, ginger is good for strong immunity, and nutmeg tones and soothes the nerves.

It is very tasty when large, soft, sweet raisins come across in lush cupcakes! And besides raisins, you can add dried apricots, nuts or chocolate chips.

Therefore, we peel the pumpkin and cut into 1-1.5 cm cubes, put it in a saucepan, on the bottom of which a little water is poured, and simmer under a lid on less than medium heat (so as not to burn) until soft, about 7-10 minutes. If the water boils away, add a little; if the pumpkin is already ready, and there is still liquid at the bottom, drain the excess. Using a potato pusher or a blender, make mashed potatoes from stewed pumpkin and leave to cool.
