This salad, bright in appearance and taste, spring in mood and vitamin in composition, is one of the countless varieties of “Coleslaw” (cole slaw), which was prepared by the ancient Romans. Simple, light and economical, healthy and rich in variations - this is what the Cole Slow salad is, which is why it has been popular for so many centuries.

And you probably cook a similar salad of young cabbage and carrots every spring - perhaps without even realizing that the recipe is so old and famous!

There are only two basic ingredients of the salad: grated fresh carrots and cabbage, chopped as thin as possible. The mysterious name "Cole Slow" is translated this way: in Dutch kool sla - cabbage salad; in English slaw - shredded cabbage.

The most delicious is Cole Slow salad with tender young cabbage, which appears in late spring - early summer. But, if not the season, but want a spring taste and mood, the salad can be prepared all year round. Instead of late white cabbage, which is more suitable for pickling, a more tender Savoy or Peking cabbage will do. In general, the classic "Cole Slow" is made by combining white and red cabbage.

It would seem that this is original, carrots and cabbage. But they are supposed to be accompanied by a salad dressing, and in it - all the brightness and originality of the taste of "Cole Slow". Moreover, there is no single recipe for dressing - every culinary specialist prepares it in his own way. The basic ingredients of the sauce are sour cream, vinegar or lemon juice, salt or soy sauce, sugar or honey. You can add other spices and seasonings to these ingredients to your liking. The most interesting and popular options are poppy seeds, horseradish, mustard, mustard or celery seeds (of course, you shouldn't plunge into the salad all at once - choose which spices you like best).

Also, in addition to the main ingredients - cabbage and carrots - housewives add apple, celery root, even pineapples and oranges to the salad. But we will prepare a version that is as close as possible to the classic - and you try and suggest your own recipe options!

Ingredients for Cole Slow

  • ½ head of savoy cabbage;
  • 1 small carrot;
  • half a glass of sour cream (if you wish, you can add a couple of tablespoons of light mayonnaise);
  • 2 tsp honey (or sugar);
  • 2-3 st. l. lemon juice;
  • 1-2 tbsp. l. soy sauce;
  • a pinch of salt;
  • parsley;
  • to taste - poppy, horseradish.

Cole Slow cabbage salad preparation method

Wash the vegetables, remove the top leaves from the cabbage, peel the carrots.

Chop the cabbage thinly - you can use a knife, but it is better to use a shredder, it will turn out thinner. Just take care of your fingers!

Grate the carrots on a coarse grater.

Mix vegetables in a bowl, sprinkle with lemon juice.

Let's prepare a dressing by combining sour cream, honey, soy sauce. Add some poppy seeds - the salad is more interesting with it!

Stir the sauce thoroughly, season the salad and mix. Taste it with salt and salt if necessary - the soy sauce is slightly salty, but this may not be enough. Also adjust the sweetness and acidity (the amount of honey and lemon juice) as everyone tastes different. The salad seemed a little bland to me, and I added a teaspoon of horseradish. It turned out what we need!

The ready-made Cole Slow salad can be served immediately - then the cabbage will crunch appetizingly - or after a while, then the salad will become soft. Unlike most vegetable salads, which are delicious and healthy only freshly prepared, Cole Slow, once infused, only tastes better!
