Method for cooking duck with apples
It's great if you manage to find a pet duck. It is fat, soft, and baked faster. Store duck is also fine, but since the meat is tougher, it is advisable to boil it before baking. And if you want to do without boiling, then you need to bake longer.
So, wash the plucked, gutted and thawed duck, slightly dry it, prick the skin with a fork or cut with a knife, rub it with salt, pepper and seasonings. Let it stand at room temperature for 1 hour - marinate.
We begin to peel the apples shortly before the indicated time has passed - if we peel them earlier, they may darken. We take hard varieties so that during long baking the apples do not turn into mashed potatoes, but remain in slices.
Cut the washed apples, peel them, but do not peel the peel.
We push apples into the duck as much as we like.

Then reduce the baking temperature to 180 ° C and cook for another 30-40 minutes so that the duck is well baked.
Even a store duck should cook in 1.5-2 hours. But inside the sleeve, it remains pale. And we need a ruddy, beautiful! Therefore, we will take out the form with tacks and carefully - in the middle of the hot steam! - cut and open the sleeve. We spread whole apples around and put the duck under the grill for 15-20 minutes.
