How to fry delicious homemade minced meat cutlets? Such that they did not fall apart, but turned out to be juicy, crispy, ruddy, neat! I am sharing a few secrets of making delicious cutlets.

Ingredients for homemade cutlets
- 300-400 g of minced meat (the most delicious effect is a combination of several types of minced meat - for example, in equal proportions of pork and beef);
- 1 small onion;
- 1 medium potato;
- 1-2 cloves of garlic;
- 1-2 slices of white bread;
- some milk;
- salt, freshly ground black pepper to taste;
- sunflower oil.

Method for preparing homemade cutlets
Chopped cutlets are the most delicious - from small pieces of meat. However, it is difficult to grind it without good knives for meat, so you can use a simpler option - twist the meat in a meat grinder with a coarse mesh. Even if you pass the meat through a regular mesh, homemade minced meat will be better than bought in the market or in a store, since you will be sure that you have put meat, vegetables, spices in homemade cutlets - and nothing more.
So, we mix two types of minced meat, salt, pepper, mix the resulting assortment.
Soak slices of bread in milk: first on one side, then on the other.
Peel the onion, potatoes, garlic, wash.



We twist the indicated ingredients in a meat grinder or three on a grater: onion - on a large one, garlic and potatoes - on a small one. At the same time, you can twist the bread soaked in milk (or just carefully crush the bread with your hands).
Add grated onion, garlic, potatoes, bread to the minced meat. Are you surprised by the presence of potatoes in cutlets? This is just one of the secrets: cutlets with the addition of raw potatoes turn out to be especially juicy. Some housewives add raw cabbage instead of potatoes. And also, at your request, you can put grated carrots or chopped greens into the minced meat for homemade cutlets. Vegetable additives add juiciness and special taste to cutlets, and bright orange and green specks in minced meat look very interesting!

Mix the minced meat well. Prepare a plate of flour for rolling cutlets, and put a pan with sunflower oil to warm up.
After wetting our hands in water, we collect a portion of minced meat for 1 cutlet and throw it with force several times from hand to hand. Thus, we "beat off" the minced meat, and the homemade cutlets are neat, do not fall apart during frying.

Roll each cutlet in flour on all sides. Instead of flour, you can use semolina or bread crumbs. The breading in egg and croutons turns out to be very successful: dipping the cutlet into a beaten egg, roll it in breadcrumbs, then repeat the procedure.
This double breading turns out to be crispy, fried and very appetizing. It is ideal for cutlets with a filling - for example, in Kiev style or with cheese in the middle: the crust does not allow the "surprise" to escape from the cutlet. And ordinary homemade cutlets can be simply rolled in flour - it will also be delicious.

Put the cutlets in a pan with heated sunflower oil. First, the fire should be higher than average for the crust to set. Then reduce the heat to “less than medium” and cover the pan with a lid so that the patties are well steamed in the middle.

Cook the cutlets under the lid for 5-7 minutes, until the minced meat changes color. Then turn over with a fork to the other side and fry without a lid over medium heat - until golden brown.

We remove the ready-made homemade cutlets on a plate and serve with a garnish of vegetables, cereals, pasta or potatoes, decorating with sprigs of fresh herbs.
