Mujadara is rice with lentils - a dish that came to us from oriental cuisine. The recipe is incredibly simple and also incredibly delicious. Mujadara can be served as an independent dish, this is justified, since it is very satisfying.
If you are preparing vegetarian recipes, then serve rice with lentils with a light vegetable salad, it will also turn out delicious. It is advisable to soak green lentils in cold water for several hours, so it will cook faster, and red lentils can be cooked immediately.
I will focus on the choice of rice. The variety must be crumbly, preferably fragrant - jasmine, basmati, in extreme cases, take steamed, long-grained. Round rice used for sushi can turn your lunch into a gooey porridge.
The onion variety is also important for the mujadara, because there is a lot of it in the recipe. You won't regret it if cooked with sweet red onions. For a lean menu, cook mujadara without butter.

- 180 g green lentils;
- 180 g parboiled white rice;
- 3 large red onions;
- 1 teaspoon of cumin;
- 30 g butter;
- 40 ml olive oil;
- salt, pepper, vegetable oil for frying.

We sort out the lentils so that small stones do not accidentally get into the food, which, what can I say, are quite often found in legumes.
Put the lentils in a saucepan, pour 1.5 liters of cold water, add salt to taste and cook over low heat for about 45 minutes after boiling.
Pour the washed rice into a separate saucepan, put a piece of butter, pour 250 ml of cold water, salt. We put the pan on the stove, bring to a boil, cover with a lid. Cook over low heat for 15 minutes, wrap it up, leave the pan wrapped up while the rest of the ingredients are being prepared.
We clean the onion from the husk, cut into feathers. Heat the vegetable oil in a frying pan, throw in the onion, sprinkle with salt. Fry over medium heat for 10-15 minutes, you do not need to turn it into chips, fry it well enough.
We put a frying pan with a thick bottom on the stove, heat it, add cumin, fry the seeds until a slight haze appears.
Throw the finished lentils on a sieve, let the water drain.
Pour boiled lentils into a deep salad bowl, add rice.
We rub the zira in a mortar. By the way, sometimes I add 1/3 teaspoon of fenugreek seeds to this dish, which I also fry together with cumin. Fenugreek is bitter, so you need to take it just a little.
So, add the grated spices to the salad bowl.
We add the fried onion to the rest of the mujadara ingredients and we can assume that our dish is ready.
I advise you to leave a little onion for serving - it will decorate the plate!
Pour high-quality olive oil into a salad bowl.
Stir the ingredients, pepper the mujadara with freshly ground black pepper.
Serve the mujadar warm, sprinkle with the remaining fried onions.
