Georgian green beans are a delicious vegetarian dish that contains only plant-based products. If you're looking for recipes for a lean menu, then this recipe is also for you. Everything is prepared very simply. First, put a frying pan with vegetables on the stove and, while they are fried, make a sauce from walnuts, garlic and lemon juice. Then we mix everything and serve, in general, a dish from the series "It couldn't be easier".

Unripe beans of common beans (green beans, or asparagus beans) are fried, boiled, stewed. Recipes from this vegetable are especially interesting for those who decided to lose a little extra pounds, because in 100 grams of green beans there is hardly 24 kilocalories. Of course, in combination with nut sauce, the dish turns out to be satisfying, but even people on a diet still need to eat something!

Ingredients for making Georgian green beans:
- 400 g green beans;
- 50 g red bell pepper;
- 80 g leeks;
- 65 g of shelled walnuts;
- 1 / 2 lemons;
- 3 cloves of garlic;
- 120 ml of boiled water;
- 5 g sea salt;
- olive oil, spices to taste.
Method for preparing green beans in Georgian style
Pour 2 tablespoons of high-quality olive oil into the pan, then throw in the leeks cut into rings. Please note that there may be sand between the leek leaves, so rinse the greens thoroughly with running water!

We clean sweet bell peppers from seeds, rinse under the tap, cut the pulp into small cubes. Add the chopped peppers to the leeks.

Then pour the green beans into the skillet. I was preparing a dish of frozen vegetables. Fresh pods must be pre-peeled - cut off the ends, take out a hard vein and cut into cubes.
Cook vegetables over moderate heat for 10-12 minutes, stir occasionally.

While the vegetables are fried, we make a traditional Georgian sauce - baje. There are many options for its preparation - with broth, with pomegranate, with wine vinegar, with cilantro. Since our recipe is vegetarian, let's make a water-based recipe.
Put the peeled walnuts in cold water for a few minutes, then rinse and dry in a hot frying pan.
Boil water, cool to room temperature.
Peel the cloves of garlic.

Grind the garlic and nuts in a mortar with salt, transfer to a mixer, pour cooled water. Squeeze juice from half a lemon.

Beat the ingredients until you get a homogeneous light paste, this is the "baje". We taste it, if necessary, add a little more salt to taste, and if the sauce is very thick, pour water and beat again.

Put the sauce on a plate. By the way, if you are a lover of Georgian spices, then utskho suneli will do here, a small pinch will be just right.

Put warm vegetables on the sauce and serve immediately.

The good thing about this dish is that it can be served hot or cold. Delicious vegetables flavored with aromatic sauce make a great dinner on fast days.
