Homemade lean noodles with mushrooms - a dish for a lean menu with wild salted mushrooms. Wheat flour pasta is easy to make at home; lean noodles require nothing but flour, water, and a drop of vegetable oil.

Wheat noodles (lean) are made from premium wheat flour. The moisture content of flour varies, so the amount of water indicated in the recipe can either be increased or decreased.
In summer and autumn, you can cook these noodles with fresh forest mushrooms, and in winter and spring, homemade preparations come in handy. Salted (not pickled!) Mushrooms are suitable for the recipe, it is important to rinse them well or soak them in cold water.

Ingredients for Lean Mushroom Homemade Noodles
For homemade noodles:
- 200 g wheat flour (+ flour for rolling and sprinkling);
- 50 ml of water (approximately);
- 7 ml of olive oil.
For the sauce:
- 350 g of salted mushrooms;
- 150 g onions;
- 30 g dried carrots;
- 1 cube of mushroom broth;
- 2 cloves of garlic;
- 35 ml olive oil;
- salt, pepper, dill.
Method for preparing lean homemade noodles with mushrooms
We measure the required amount of flour, weigh it. If there are no scales, then in a faceted glass of flour 130 g, and in a glass of thin glass - 160 g.
We make a small depression in the flour, pour in cold water and olive oil.

Knead the noodle dough with our hands, which, when finished, should not stick to the hands and the table. If it turns out to be tight, add cold water.
Roll the finished dough into a ball, cover with a salad bowl and leave it alone for 20 minutes; you do not need to put it in the refrigerator.

Sprinkle flour on the cutting table, rolling pin and hands. Roll out the noodle dough thinly, try not to tear the sheet. If you don't have enough experience, you can divide the kolobok into two parts and roll each separately. The rolled out dough looks like a piece of soft cloth.

Next, fold the dough flap into a tube and cut into strips. The width of the noodles at the discretion of the hostess - from 1 centimeter to very thin strips.
Sprinkle the noodles with flour, leave on the board for another 20 minutes.

For mushroom sauce, finely chop the onion heads.

We wash the salted mushrooms with cold water, put on the board and chop with a sharp knife. Dried mushrooms are also suitable for this sauce - boil them until tender and pass through a meat grinder.

Next, heat the olive oil in a saucepan or frying pan, add the chopped onion, fry for 5-7 minutes until transparent.
Throw chopped mushrooms to the onion, add a crumbled cube of mushroom broth, dried carrots, mix, fry over low heat for another 10 minutes, until the moisture evaporates.

Then add the garlic cloves passed through the garlic press, add salt to taste, pepper with black pepper, mix, cook for 3 minutes, remove from the stove.

Heat 2 liters of water in a saucepan to a boil, add salt, throw the noodles into boiling water. Cook for 5 minutes, discard in a colander.
Mix the noodles with mushroom sauce.

Serve lean homemade noodles with mushrooms hot, sprinkle with dill before serving.

Homemade noodles can be dried and stored in a box, but it's best to cook them right away for a better taste.
