Biscuit roll "Winter Fairy Tale" is a delicious homemade dessert that can be prepared for a holiday or for an ordinary evening tea party. There are several important points in making this roll. First, make a cream and send it to the bottom shelf of the refrigerator - you don't need to cool it too much. Then turn on the oven to heat up to the desired temperature while it heats up, quickly mix the biscuit dough and send to the preheated oven. Next, collect the biscuit roll according to the recipe.

Ingredients for the "Winter's Tale" biscuit roll
For the cream:
- 380 ml of milk or cream;
- 100 g sugar;
- vanilla extract;
- 70 g semolina;
- 250 g butter;
- a pinch of salt.
For the biscuit dough:
- 5 chicken eggs;
- 85 g sugar;
- 60 premium wheat flour;
- 4 g baking powder;
- vegetable oil, salt.
For the filling of the roll:
150 g apricot jam
To decorate the biscuit roll:
- 60 g coconut flakes;
- icing sugar, confectionery dressing.
Method of making a biscuit roll "Winter's Tale"
First we make the cream
Throw a pinch of fine salt into milk or cream and add sugar, put on the stove, heat slowly, stir until sugar dissolves.

Continuing to stir the milk, pour the semolina in a thin stream, if you pour all the semolina at once, it will turn into a lump. As soon as the porridge thickens, make a very small light and simmer for 5-6 minutes.

We take out the butter from the refrigerator in advance, cut it into small pieces. Cool the semolina porridge to 30 degrees Celsius.
Add a few drops of vanilla extract and a couple of cubes of butter to the saucepan. We begin to beat the mass at first at slow turns, then gradually increase the speed of the mixer and at the same time add (one at a time) pieces of butter.
Beat the cream for 5 minutes, put it in a pastry bag with a nozzle, put it in the refrigerator.

Next, we make a biscuit for a roll
Beat eggs, sugar and a pinch of salt in a mixer until the mixture grows about 3 times. The mass will turn out to be thick, the peaks should not fall from the corollas.

Mix wheat flour with baking powder, add to a bowl with beaten eggs, knead a homogeneous dough without lumps.

Cover the baking sheet with baking paper, grease the paper with refined vegetable oil (odorless). Pour the dough onto a baking sheet, level.
We immediately send the baking sheet to an oven heated to 180 degrees Celsius. Bake a biscuit for 9 minutes.

Remove the hot sponge cake on paper from the baking sheet and roll it into a tight roll.

After about 10 minutes, unfold the roll, remove the paper. On the table we spread a clean sheet of baking paper, put a biscuit, grease with apricot jam.

Roll up the biscuit roll and decorate
We roll up the roll, put it on a dark festive plate or on a board with the seam down. Pour some icing sugar into a sieve, sprinkle on top - imitate snow. You cannot pour a lot of powdered sugar on the dough, the cream does not adhere well to the powder.

Squeeze out the cream evenly from the pastry bag - you get a creamy log.

Sprinkle the log with coconut flakes and decorate with pastry sprinkles. I was not lazy, I got yellow stars from a multicolored mass - it turned out stylishly.

We remove the biscuit roll in the refrigerator for several hours.

This biscuit roll is a bit like the classic Christmas log, the principle of preparation is the same, however, the biscuit in the log is usually soaked in alcoholic syrup.
