For pancakes:
- 2 chicken eggs;
- 160 ml of milk;
- 35 g butter (+ oil for lubrication);
- 60 g of premium wheat flour;
- 5 g granulated sugar;
- 2 g of soda;
- salt, oil for frying.
For filling:
- 200 g of cottage cheese;
- 30 g sour cream;
- 50 g cane sugar;
- 100 g of prunes;
- lime zest;
- mint, fresh berries, powdered sugar for serving.

Making the filling for French crepes
Wipe the cottage cheese through a sieve to get rid of lumps. You can take mascarpone or ricotta, usually these delicate types of cheese are simply mixed with fillers (sugar, fruits, dried fruits).

Add sour cream, cane sugar to the grated cottage cheese and rub the zest of half a lime on a fine grater.

Soak prunes in warm water, rinse, squeeze, cut finely and add to the curd mass. Mix the ingredients, put them in the refrigerator.

Making pancake dough
