Oven Meatballs with Vegetable Gravy is a dietary hot minced chicken dish. Usually, the sauce for cutlets is prepared on the basis of broth, which is thickened with flour or starch. In this recipe, the gravy is prepared without flour, only vegetables.
Oven-baked small balls of meat in a thick and aromatic gravy can be served with mashed potatoes, rice or buckwheat for a full-fledged hearty meal.
I made chicken fillet meatballs, but you can use this recipe to make meatballs from any minced meat - pork, beef, or mix several types of meat.

Ingredients for Meatballs with Vegetable Gravy
For the meatballs:
- 800 g chicken fillet;
- 100 g of onions;
- 50 g green onions;
- 100 g loaf;
- 60 ml of milk;
- salt pepper.
For gravy:
- 300 g zucchini;
- 80 g of onions;
- 80 g carrots;
- 100 g bell pepper;
- 200 g of tomatoes;
- 30 ml of sunflower oil;
- salt, granulated sugar, paprika.
How to cook meatballs with vegetable gravy in the oven
Starting with minced meatballs
Place finely chopped chicken fillet in a food processor, add onions and green onions. The feather onions will give the minced meat a light green hue; during cooking, the color intensity will disappear. Then add the loaf without a crust soaked in milk, add salt and freshly ground black pepper to taste. Grind the ingredients to a homogeneous composition and remove the bowl of minced meat in the refrigerator for 15 minutes.
Lubricate the baking sheet and hands with frying oil. We make small round meatballs about the size of a ping-pong ball. We spread on a baking sheet with a small distance between them. If you sculpt meat balls with wet hands, the water, falling on the baking sheet, will splash, sizzle, and the butter will cover the cutlets with a thin layer and you will get a golden crust.
We place a baking sheet with meatballs in an oven heated to 200 degrees, cook for about 12 minutes. If you are cooking in a gas oven, turn the meatballs once.
Now making the meatball gravy
Peel the zucchini from the peel and seeds, cut into cubes. Chop finely or three carrots on a grater. Cut the tomatoes and bell peppers into large slices. Cut a small onion head into half rings.
Put zucchini, carrots, bell peppers, tomatoes and onions in a deep stewpan.
Pour sunflower oil into a saucepan, add granulated sugar and salt to taste. Add ground sweet paprika.
We close the saucepan with a lid, simmer for 30 minutes, until the vegetables are completely soft.
Grind the stewed vegetables with an immersion blender until smooth, taste them so that there is enough salt and sugar.
Pour the gravy into a baking sheet with meatballs, put the baking sheet back in a hot oven for 10 minutes.
Serve the meatballs hot, sprinkle with fresh herbs before serving.
By the way, advice to those who cook for the whole working week, that is, for future use. Divide the cooked meal into small portion tins or bowls and send them to the freezer. All that remains is to warm up a delicious dinner in the microwave oven after a tiring day at work.
