To make croutons, take wheat-rye bread made from whole grain flour, it is good if it contains some seeds - flax, sunflower, pumpkin.
I made this appetizer from smoked chicken breast (skinless). You can replace the breast with boiled chicken, chicken ham or boiled beef.

- 200 g smoked chicken breast;
- 300 g of young cabbage;
- 150 g fresh cucumbers;
- 50 g of hard cheese;
- 150 g whole grain toast bread.

- 20 ml olive oil;
- 10 g of table mustard;
- sugar, salt, pepper.

Grate a small piece of hard cheese on a cheese grater, add to the rest of the ingredients. Hard cheese can be replaced with feta or feta cheese, the taste of a ready-made fresh cabbage salad with ham and crackers will be slightly different, but the variety is always nice.

Mix the sauce. Combine table mustard with soy sauce and extra virgin olive oil in a bowl, add a pinch of sugar and salt to taste. The sauce can be shaken in a small jar with a hermetically sealed lid and is a very convenient way to make salad dressings.

Dry in a toaster a couple of slices of whole-grain toast until golden brown. Cut the croutons into small cubes.

Add the croutons to a bowl of fresh cabbage and ham salad and season with the sauce, mix thoroughly.
