We prepare delicious meat cutlets with oatmeal and vegetables from low-fat pork. To make the cutlets tender, fluffy and satisfying, add zucchini, green onions and instant oatmeal or rolled oats to the minced meat. We bake cutlets in the oven along with small young carrots. As a result, we will get a tasty and healthy meat dish with a low-calorie side dish. For those who care about their diet and value time, this recipe is a godsend.
It's no secret that minced meat or minced meat without adding fat produces rather dry cutlets. Fresh vegetables, in our case zucchini and onions, make the cutlets juicy, and the oatmeal will absorb the healthy meat juices and prevent them from flowing onto the baking sheet.

- 450 g lean pork;
- 1 head of onion;
- 1/2 small zucchini;
- a bunch of feathers and parsley;
- 60 g of rolled oats;
- 5 g ground paprika;
- 5 g dry seasoning;
- 400 g of young carrots;
- salt, pepper, olive oil.
Method for preparing delicious meat cutlets with oatmeal and vegetables
Cut off the veins, tendons and films (if any) from a piece of lean pork, and cut the meat into small cubes.
Cut the onion head into several parts.
Finely chop a bunch of feathers and parsley. Instead of onions and parsley, you can take any spicy herbs to your liking - cilantro, celery, dill or lovage, in a word, anything that suits meat.
Peel half of a small zucchini, remove the seed bag. Cut the zucchini pulp into cubes.
Place all ingredients in a food processor bowl and grind until smooth. Instead of a food processor, you can skip the ingredients through a fine-tuned meat grinder.
Next, add rolled oats, ground red paprika, salt to taste and dry seasonings to the minced meat. I have a homemade mixture of dill, lavrushka and cumin - very aromatic.
Mix the minced meat thoroughly, cover the bowl with cling film and put it in the refrigerator compartment for 20 minutes. Meanwhile, we heat the oven to a temperature of 200 degrees Celsius.
Grease the baking dish and hands with olive oil. We make oval minced meat cutlets, put them in a mold with a small distance between them. Press on the cutlet with your palm to make it flat. We take a young carrot, cut off part of the tops. Grease the carrots with olive oil, lay them in between.
We send the form to a preheated oven, cook for 10-12 minutes on one side, then take out the form, turn it over and cook for another 10 minutes.
Serve hot cutlets to the table - golden cutlets with caramelized carrots turn out to be very tasty!
