DIY cupcakes are delicious sweets-gifts that are becoming incredibly popular nowadays. Agree, it's nice to drop by your friends for tea and, instead of a traditional cake from a nearby grocery store, shock the ladies with homemade cakes, packed in the latest fashion. Filled and topped cupcakes (small muffins) can be made in less than an hour. In a specialized confectionery shop, buy elegant paper molds and packaging for cupcakes. All that remains is to pack the sweets in a box and go on a visit with a delicious gift.

In this recipe, I decorated muffins with nuts and dried fruits - a gift for lovers of natural products.

DIY cupcake ingredients
For cupcakes:
- 230 g granulated sugar;
- 240 g butter;
- 2 large chicken eggs (or 3 small ones);
- 210 g wheat flour;
- 30 g orange powder;
- 30 g cornstarch;
- 10 g baking powder;
- 150 g raisins;
- 150 g candied fruits;
- salt.
For topping:
- 130 g of dark chocolate;
- 30 g butter;
- 2 tbsp chopped nuts;
- 2 tbsp dried cranberries;
- 2 tbsp yellow raisins;
- 2 tbsp candied fruits;
- cognac.
Method of making cupcakes with filling and topping
We measure out the granulated sugar, pour it into the mixer bowl, then add the diced butter. We take the oil out of the refrigerator in advance so that it warms up to room temperature.
Beat the butter and sugar until the mixture turns into a fluffy buttercream.

We also take the eggs out of the refrigerator in advance so that they warm up to room temperature. Break the eggs one by one into the mixer bowl, beat until fluffy.
We measure out the wheat flour, add baking powder and a pinch of fine table salt. Do-it-yourself cupcakes are baked from premium wheat flour or whole-grain wheat flour.
Pour cornstarch and orange powder into a bowl. Orange peel powder can be replaced with grated zest of two oranges.



Scald the raisins with boiling water, dry them on a paper towel. Mix dry and liquid ingredients so that you get a homogeneous dough without lumps, add scalded raisins to the dough.

Chop candied fruit finely. This time I added candied pineapple and candied pear.

Insert paper muffins into silicone molds. This must be done so that the peaks with their own hands rise up and not spread out in width.
We fill the molds with dough almost to the top, leave 1/3 of the molds free.

We heat the oven to a temperature of 175 degrees Celsius. We send the pastries to a heated oven, cook for 25-30 minutes.

Melt the bitter chocolate with butter in a water bath. Pour chocolate icing on warm cupcakes.
For decoration, finely chop the walnuts, cut candied fruit into cubes, put the raisins in boiling water for a minute, then dry them, sprinkle with brandy. Sprinkle the dried cranberries with cognac.

Decorate the muffins with nuts and dried fruits, which easily stick to the warm chocolate coating.
