A fluffy apple charlotte baked in the oven is a delicious apple pie that every housewife should be able to bake. There are many dough recipes, I, most often, prepare it on the basis of eggs well beaten with sugar. I add a little olive oil and a little fatty sour cream to the dough, so it turns out wet. Choose sweet apples. Such a variety as Antonovka, in my opinion, is not suitable for charlotte - apples are very sour. Sometimes I add orange or lemon zest to the dough for flavor, this diversifies the apple charlotte. But if you don't like the apple-orange combination, then you can add cinnamon.

Ingredients for apple charlotte
- 600 g of sweet apples;
- 6 chicken eggs;
- 210 g granulated sugar;
- 180 g of premium wheat flour;
- 20 g orange powder;
- 8 g baking powder;
- 30 g sour cream 26%;
- 40 g olive oil;
- salt, soda.
- 15 ml lemon juice;
- 60 g icing sugar.
Apple charlotte preparation method
We take out all the products for apple charlotte from the refrigerator in advance so that they warm up to room temperature.
We break the eggs into the mixer bowl, add 1/3 teaspoon of fine salt, pour all the granulated sugar. Begin to beat the ingredients at low speeds, gradually increase the mixer speed to the maximum value. Beat for a total of 5 minutes, during this time the sugar grains will completely dissolve, the mass will significantly increase in volume.
We take a large container, sift premium wheat flour into it, add orange powder or any natural flavoring to your liking - ground cinnamon, ground cardamom. Then pour in the baking powder, mix the dry ingredients with a spoon.
Pour about half of the eggs beaten with sugar into a container, mix.
Add fresh fat sour cream and baking soda on the tip of a knife.
Pour in the olive oil. Instead of olive oil, you can melt butter, or use corn or canola oil.
After adding the oil, mix the ingredients thoroughly to get rid of the flour lumps.
Next, add the remaining egg-sugar mass and very carefully, in circular, monotonous movements, quickly knead the dough.
Remove the middle of the sweet apples, cut the apples into cubes and throw them into the dough.
Gently mix the ingredients with a spatula and turn on the oven to heat up to 175 degrees Celsius.
Grease the cake pan with butter, sprinkle with flour. We spread the dough in a mold, distribute it in an even layer.
We send the apple charlotte to the heated oven. Cooking for 35-40 minutes. We check the readiness with a wooden stick - if you stick the stick in the thickest place, it should come out dry.
Cool the finished apple charlotte for 15 minutes in the form, then turn it over onto a plate.
To decorate the apple charlotte, mix the sweet and sour glaze - grind freshly squeezed lemon juice with powdered sugar in a porcelain bowl. Pour lemon glaze on charlotte.
