At this stage, break a fresh chicken egg into a bowl, add salt to taste and pour ice water. You will need a little water - 70-100 ml (about half a glass). I have seen recommendations such as "how much minced meat will take", but he can take so much that you get not cutlets, but thin pancakes.
Mix the meat well with the egg and water, add the potato starch and the suneli hops, mix again.
Now add the fat sour cream. Sour cream should be fresh, not sour!
