The "New Year" salad with red fish and caviar will decorate any snack table, not only the main one of the year. There is no special exoticism in this dish - a little salted red fish, a bit of caviar, fatty cream cheese, eggs, an orange and, of course, mayonnaise. What's a holiday salad without it? For decoration you need a quail egg and some green olives.
Any salted red fish is suitable for the recipe - salmon, pink salmon, salmon or chum salmon. I myself salted pink salmon according to a Scandinavian recipe under a beetroot coat. The result is a tender, dark pink pink salmon, which is easy to cut into thin slices - convenient for making both sandwiches and salads.
You can cook this appetizer in advance, and decorate right before serving so that the caviar does not dry out, since with dried caviar, the salad looks sad and unappetizing.

- 80 g cream cheese;
- 100 g green olives;
- 1 small sweet and sour orange;

- 90 g mayonnaise;

Boil chicken eggs hard-boiled, cool, separate the white from the yolk.
Rub the protein on a cheese grater, separate 2/3. Put the protein on a serving plate, grease with mayonnaise.
Mayonnaise can be mixed with fat sour cream, a little salt and pepper.
Put all the egg yolk grated on a fine (cheese) grater on a layer of mayonnaise. Mayonnaise is important in this salad - it holds the layers together, prevents them from crumbling.
Gently, so that the yolk layer does not crumble, grease it with mayonnaise, and put the fish cut into thin slices on top.
Chop the green olives finely, make the next layer, again, through the mayonnaise layer. By the way, olives stuffed with anchovies are suitable for this dish.
Rub the cream cheese (I advise you to take a tender and not very salty) coarsely, put on olives.
