Sprat sandwiches on the holiday table are budget sandwiches for the holiday, which, despite their simplicity, are incredibly popular. Quite a lot of cold snacks from ancient Soviet times can be found on the New Year's table to this day. But several recipes are so firmly rooted in the holiday menu that it can already be called a tradition. Olivier with doctor's sausage, herring under a fur coat, fake caviar from herring with carrots, sandwiches with red caviar, jellied fish and, of course, sandwiches with sprats.

My recipe is good in that bread, fried in a certain way, does not stale and soak for a long time, sandwiches remain fresh, appetizing and an oven is not needed for their preparation.

Ingredients for sprat sandwiches
- 1 can of sprat;
- 2 chicken eggs;
- 4 quail eggs;
- 30 g of cheese;
- a small bunch of dill;
- 1 tablespoon mayonnaise;
- 1 tablespoon cheese sauce
- wheat and rye bread;
- 1 clove of garlic;
- black pepper, vegetable and butter.
Method of making sandwiches with sprats
Making croutons. Cut the wheat-rye bread into slices about a centimeter thick. We break one chicken egg into a bowl.
Salt the egg, add freshly ground black pepper and mix with a fork to achieve a uniform consistency. You do not need to whip into foam, mix the egg well enough.
Now dip a slice of bread in a beaten egg, first on one side, then on the other side.



Heat vegetable oil and butter in a frying pan. Fry slices of bread until golden brown on each side. Rub the fried bread with a clove of garlic.

Boil a hard-boiled chicken egg, cool, rub it on a grater. Finely chop a small bunch of dill, leave a few branches for decoration.
Add cheese sauce and mayonnaise, grated cheese and chopped dill to the boiled egg.

Thoroughly grind the ingredients with a fork to make a thick, homogeneous spread.

We boil the quail eggs hard-boiled; they need no more than two minutes to boil them. Cool the eggs in cold water, peel, cut in half.

Spread the slices of toasted bread with cheese paste. The pasta layer can be thick - it's delicious!
We spread three fish on each sandwich. The paste is viscous, so they will stick well to the sandwich and will not fall off it (on the way to your mouth).
Decorate the sandwiches with halves of quail eggs and dill sprigs.



We put our sandwiches with sprats on a plate and serve immediately. Bon Appetit!

The younger generation may choose a seafood salad, but recently saw a comment from a young friend who was offended by attacks on Olivier. He said that he eats this salad only once a year, and therefore cannot imagine his mother's New Year's table without a traditional recipe!
