Homemade muffins with dried fruits - a simple recipe with figs, cranberries and prunes that will obey even a novice pastry chef who is inexperienced in pastry. A delicious kefir cake with cognac and dried fruits will decorate any home holiday, moreover, such pastries can be prepared in less than an hour. However, there is one important point - dried fruits must be soaked in cognac for at least 6 hours. I advise you to do this on the eve of cooking - they will soak well overnight. Instead of cognac, you can use rum, whiskey or strong liquor.

Ingredients for homemade dried fruit muffins
- 100 g dried figs;
- 50 g dried cranberries;
- 100 g of prunes;
- 150 ml of brandy;
- 150 g butter;
- 200 g granulated sugar;
- 150 ml of fatty kefir;
- 2 chicken eggs;
- 120 g wheat flour;
- 70 g semolina;
- 1 teaspoon baking powder
- 1/3 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 30 g of ground orange peels or zest of 2 oranges;
- a pinch of fine salt, powdered sugar.
Method for making homemade muffins with dried fruits
Put dried fruits in a bowl, pour boiling water over. After a few minutes, drain the water, rinse the dried fruits thoroughly with running water.
Then cut the figs and prunes into thin strips, leave the dried cranberries whole. We place the dried fruits in a hermetically sealed jar, pour in the cognac, leave at room temperature for 6-8 hours, or better overnight. During the night, dried fruits will absorb almost all the alcohol.

Making muffin dough with dried fruit. Mix the softened butter with granulated sugar and a pinch of fine salt.

Beat eggs with sugar with a mixer.

Beat the ingredients well so that the mass becomes light and fluffy, and the granulated sugar grains dissolve.
Then add fatty, slightly warm kefir. You can put a bottle of kefir in hot water for a couple of minutes, so it will heat up faster.
Next, add dry ingredients to liquid ingredients - pour in sifted wheat flour, semolina and ground orange peels. We also add baking powder and baking soda.
Knead the dough thoroughly so that no lumps remain.
When the muffin dough is ready, add dried fruits soaked in cognac and ground cinnamon.



Stir the dough thoroughly again and heat the oven to 180 degrees Celsius.

We take paper molds, insert them into silicone or metal ones. If you do not support the paper with a thicker shape, the cupcakes will spread out in width.
