Plain Pear and Nut Muffins - Sweet, Juicy and Delicious! Great Britain and America are considered the birthplace of muffins. In England, such muffins are made from rich yeast dough, in America from butter-free dough, which is loosened with baking soda or baking powder, or both at the same time. The basic recipe for muffins looks like this: 200 g of flour, 200 ml of milk or kefir, 100 g of eggs, 100 g of butter, baking powder and soda. Sugar or any other sweetener is added to sweet muffins. Filler for muffins can be anything - let your imagination fly, there are never many goodies!
- Cooking time: 35 minutes

Ingredients for pear and nut muffins
- 200 g whole wheat flour;
- 200 ml of kefir;
- 100 g butter;
- 2 small eggs;
- 100 g sugar;
- 1.5 teaspoons baking powder;
- 0.5 teaspoons of baking soda;
- 50 g of hazelnuts;
- 50 g raisins;
- 1 large pear;
- 50 candied pineapple;
- 30 g of chocolate (white and bitter);
- coconut flakes, paper molds.
How to make simple muffins with pears and nuts
Pour fine white sugar into a deep bowl, add butter softened at room temperature. Grind the granulated sugar with butter first with a fork.
At this stage, take a mixer, beat eggs with sugar, break small chicken eggs one at a time.
Next, pour into a bowl kefir at room temperature or slightly warmed up. If you pour cold kefir into a bowl, the mixture will exfoliate. There is nothing wrong with this, the dough will become smooth as you add the rest of the ingredients.
Mix the wheat flour, baking soda, and baking powder separately. Sift dry ingredients into a bowl, knead muffin dough.
Dry the hazelnuts in a skillet without oil, cool. Chop nuts finely, add to the dough.
Rinse the raisins thoroughly, scald them with boiling water, put them on a paper napkin, when the raisins are dry, pour them into a bowl.
Finely chop the muffin pear. You can also put apples, fresh berries, for example, blueberries or blueberries in the dough.
Cut the candied pineapple into cubes, add to the rest of the ingredients.
Now put chocolate in the muffin dough. I added drops of white and dark chocolate, you can opt for any one chocolate. Mix the ingredients thoroughly and turn on the oven. We heat up to 180 degrees Celsius.
We take paper muffin molds, fill with dough to 2/3 of the volume.
Sprinkle each muffin with coconut flakes for a wonderful fragrant and golden brown crust.
We send the muffins to the preheated oven for 15-20 minutes. Since the products are small, then you need to bake them a little. Do not open the oven during cooking! We immediately take out the finished muffins with pears and nuts from the oven, cool on the wire rack.
These baked goods store well in a metal muffin or cookie box. The shelf life is about 4-5 days, a little more can be. Bon Appetit!
