Lean Avocado Salad - A light vegetable salad that's perfect for lean and vegetarian menus. This dish can also be included in the diet menu, however, if you decide to part with extra pounds at the waist, then reduce the amount of olive oil in the dressing and take only half of the avocado, instead of the whole fruit.
Prepare the salad just before serving - chopped fresh vegetables lose their taste, the avocado salad will become "wet" and tasteless if stored for several hours.

Lean Avocado Salad Ingredients
- 1 avocado;
- 1 red onion;
- 1 fresh cucumber;
- 1/2 head of iceberg lettuce;
- 3 tomatoes;
- 1 teaspoon black sesame seeds
- lemon juice.
For refueling:
- 1 / 2 lemons;
- 2 tablespoons olive oil
- 1 teaspoon dry vegetable salad dressing
- 2 teaspoons of grain mustard
- red pepper or paprika;
- sea salt to taste.
Method of preparing lean salad with avocado
Cut the avocado in half, take out the pit. Remove the pulp with a dessert spoon, cut into thin slices, put in a salad bowl.
The avocado pulp is quickly oxidized in the air - it becomes dark, looks unappetizing. To preserve the color of the fruit, pour it with freshly squeezed lemon juice, and so that lemon seeds do not get into the lean salad, filter the juice through a strainer.
Cut the sweet red onion into thin feathers, add the chopped onion to the salad bowl to the avocado.
We cut a fresh cucumber into thin slices, send the chopped cucumber to the salad after the onion. I advise you to peel the long-fruited greenhouse cucumber and remove the change from it.
We cut a small head of cabbage of "Iceberg" in half, cut the leaves coarsely or tear them by hand. There is an opinion that vegetables lose vitamins from contact with metal, they say, therefore, it is better to tear the salad with your hands. In fact, the loss of vitamins is negligible, so a knife can be used.
Cut ripe red tomatoes in half, cut out the stalk with a seal, cut the tomatoes into slices. If using cherry tomatoes, it is better to add them whole.
Making a gas station. Squeeze a tablespoon of lemon juice into a bowl, add a pinch of sea salt, grain mustard and dry seasoning for vegetable salads.
Pour delicious olive oil (unrefined) into a bowl, add a pinch of ground sweet paprika or red pepper if spicy food is to your liking. Mix the dressing with a spoon to make it smooth.
Pour the dressing into a salad bowl, stir the vegetables so that the dressing saturates each piece.
Sprinkle the salad with black or white sesame seeds. In addition to sesame seeds, you can sprinkle roasted pumpkin seeds or flax seeds on the dish for a varied texture.
Serve immediately the lean avocado salad on the table. The fresh salad turns out to be crispy - (Iceberg leaves, cucumber and red onion), with delicate splashes of avocado, ripe tomatoes and an appetizing, spicy dressing with a slight sourness of lemon. Bon Appetit!
