Ingredients for peaches in grape juice for the winter
- 500 g peaches;
- 1 bunch of red grapes;
- 150 g granulated sugar;
- water.
A method of cooking juicy peaches in grape juice for the winter
First, let's prepare grape juice-syrup for pouring peaches. Thoroughly rinse a small bunch of red grapes with running water, pick off the berries from the brush, and put them in a saucepan.
Pour 50 ml of water at the bottom of the stewpan, close the lid, steam the grapes over moderate heat for 10 minutes, then crush the berries with a potato crush.
We wipe the grapes through a fine sieve - the pulp (seeds and skin) will remain on the mesh, and the purest natural grape juice with pulp will collect in the pan.
Pour granulated sugar into the grape juice, mix, bring to a boil, boil for 2-3 minutes, set aside and deal with peaches.
We sort out the fruits, remove the crumpled ones and with signs of spoilage. For this recipe, slightly unripe fruits with firm pulp are suitable. Next, you need to peel the peaches.
Wash the fruit, put it in a saucepan, fill it with boiling water, leave it for a few minutes.
From a saucepan with boiling water, transfer the fruits to a bowl of ice water, after a couple of minutes remove the peel - it will come off very easily, without any effort.
Cut the peeled fruit in half, take out the seeds.
Cut the peeled fruits into large slices.
Thoroughly wash the jar and lid for making compote with warm water and soda, rinse with hot water. Then we sterilize the jar over steam, in the microwave or in the oven, throw the lid into boiling water for a couple of minutes.
Put chopped peaches in a dry jar, fill the jar to the very top, but not very tightly.
Now pour boiling grape juice with sugar into a jar of fruit, fill it almost to the neck, since the fruit will absorb the juice and the volume will decrease slightly.
We tighten the jar with a tightly boiled lid. Put a cotton towel in a large saucepan, pour hot water, put a jar of compote. Bring to a boil over moderate heat, sterilize for 12 minutes.
We take out a jar of canned peaches from the pan with special tongs, turn it upside down, cover with a terry towel, leave to cool - the pasteurization process will continue until the workpiece has cooled
Peaches are ready for the winter. We store the cooled blanks in a dry and dark place. Such compote can be stored in an ordinary city apartment in a pantry away from heating appliances.
