This homemade sausage pizza is somewhat similar to Italian focaccia, but there is less oil in the dough and filling, as the correct focaccia literally oozes with olive oil. Any raw smoked sausage is suitable for the filling; in combination with parmesan, a spicy salty crust is obtained on airy dough, and aromatic thyme adds spicy notes. Ready-made pizza can be stored in the refrigerator for a couple of days, reheated in a skillet under the lid or in the microwave.

For the test:
- 10 g fresh yeast;
- 180 ml of water;
- 280 g wheat flour;
- 20 ml olive oil;
- a pinch of salt.
For filling:
- 120 g raw smoked sausage;
- 60 g ketchup;
- 20 ml olive oil;
- 60 g parmesan;
- 2 sprigs of thyme.
Method of making thick homemade pizza from yeast dough with sausage
Pour warm water (30-35 degrees Celsius) into a bowl, add a piece of fresh yeast, stir to completely dissolve the yeast.
We sift the premium wheat flour through a sieve to saturate with air and add splendor. Pour the sifted flour into a bowl with dissolved yeast, add a pinch of fine salt.
Add high-quality extra virgin olive oil, first mix the ingredients with a spoon, then lay out on a floured table, knead the dough thoroughly.
The finished dough for homemade pizza is pleasant to the touch, does not stick to your hands. Lubricate the bowl with olive oil, add the dough.
We tighten the bowl with cling film, put it in a draft-protected place for about 1 hour. The temperature for the first proofing is room temperature from 18 to 22 degrees. After about an hour, the dough will grow, approximately double in volume.
Remove the cling film from the bowl, gently knead the dough.
We take a pizza dish, lay out the dough, stretch it with our hands - give the cake a round shape, form a small side.
First, grease the cake with olive oil.

Cut the raw smoked sausage into thin slices, put it on the cake so that the sausage slices fill the cake tightly, but in one layer.
Sprinkle the sausage with grated Parmesan. Meanwhile, turn on the oven to heat up to a temperature of 180 degrees. While the oven heats up, the dough will have time to rise a second time; the second proofing takes about 20 minutes.
