Pickled cucumbers in slices with citric acid are side cucumbers, the principle of preparation of which I somehow spied on in one TV show. They showed a large factory that pickles cucumbers for hamburgers. These are really excellent side dishes that are indispensable in cases of emergency, when there is absolutely no time to cook dinner, but you need to feed your family. On a plate with mashed potatoes and sausages, I put a heap of chopped cucumbers with onions - and it's already delicious!
Often housewives use the latest cucumbers for such preparations, which are no longer possible to attach anywhere. I do not recommend pickling heavily overgrown ones in this way, but all the autumn "crooks" can be put into business.

Ingredients for making pickled cucumber slices:
- 1.5 kg of large cucumbers;
- onion head;
- 4 cloves of garlic;
- 1.2 l of water;
- 55 g salt;
- 35 g granulated sugar;
- 6 g citric acid.
- caraway seeds, coriander, pepper, cloves, currant leaves, dill.
Method of preparing pickled cucumbers with citric acid slices
When you get tired of rolling pickled and pickled cucumbers, when the basement is already filled to the top, and only overgrown and ugly ones remain in the beds, it's time to cook excellent side dishes pickled in circles.
Any substandard is suitable for this recipe - large, slightly overripe, sunburned and curves.
First, as always, my vegetables are clean, we cut off the butts and tails.
Next, cut the vegetables into slices about half a centimeter thick. Too thin slices can fall apart, and thick ones are uncomfortable to eat.
Then add the onion head cut into half moons to the cucumbers. Put a standard set of pickling spices in a cleanly washed jar - an umbrella of dill, a few cleanly washed black currant leaves, whole garlic cloves.
Now we fill the jar with chopped vegetables, shake them so that they settle down tightly. Hot water will soften the vegetables so that the jars are not half empty, you need to pack everything well.
Pour boiling water into cans, leave for 10 minutes, pour into a saucepan. So that the jars of vegetables do not stand without water, pour boiling water over them again during the preparation of the marinade.
Add citric acid, granulated sugar, salt and spices to a saucepan with drained water - cloves, black pepper, bay leaves, caraway seeds and coriander. Boil the marinade for 5 minutes.
Pour boiling water from the jars with cucumbers, pour in the hot marinade, cover with a lid.
We sterilize liter cans 15 minutes after the water boils. We twist the lids tightly, turn the cans upside down. After cooling, we remove the workpieces in a dry and dark place for storage. Pickled cucumbers prepared in this way can be stored in the apartment. I advise you to choose a storage location away from the battery and sunlight. The optimum temperature should not be more than 18 degrees.
The workpieces will “ripen” in a month, by which time the cucumbers will be soaked in marinade and become very tasty and crispy. Bon Appetit!
