In England - spelled, in Germany - dinkel, in Italy - farro. These beautiful names mean wild wheat, of which there are 8 varieties. Spelled is an ancient cereal culture, the age of which is from 6 to 8 thousand years. And all these millennia it has remained unchanged: extremely resistant to droughts and bad weather, weeds and pests; not amenable to genetic modification and not accepting chemical fertilizers.

Wild wheat is practically the only completely natural and always environmentally friendly cereal crop at the moment. Therefore, spelled dishes are very useful, but at the present time it is grown very little, as a result of which spelled is valued much more expensive than plain wheat. But believe me, it's worth it!

Wild wheat has a much lower gluten content than regular wheat, so spelled dishes are practically not capable of causing allergies. But nutrients - in particular, iron, B vitamins and protein - it contains more. The high content of plant proteins and amino acids, which are not found in food of animal origin, increases the nutritional value of grains. Spelled is absorbed quickly and very easily.

They knew about the beneficial properties of spelled a long time ago. No wonder the ancient Sumerians, Egyptians, Greeks and Romans, Scythians and Slavs ate it. From the Neolithic era to the 19th century AD spelled was preferred to modern wheat due to its special unpretentiousness: the stalks of wild wheat tolerate, without lodging, even powerful showers and winds, ripe grains do not crumble from the ears, and spelled weeds are "too tough", rather, on the contrary.

With all these advantages, it is difficult to thresh the spelled, since the scales of the spike are adhered to the grains and threshed with them, which makes the grain difficult to clean. But when grinding grain into flour, most of the nutrients remain, and do not go away with the bran, as is the case with “naked” wheat. But, since it is easier to thresh ordinary wheat, and it is more productive, about a couple of centuries ago, spelled was sown less and less, giving preference to "bare-grain" varieties.

Now spelled, as a pure and useful culture, was remembered again. And in some places, for example, in Italy, they did not forget - it is from farro in the north of the country that the classic risotto is prepared. Gradually, crops of wild wheat began to appear again in other countries of the world, and various dishes from it were on the menu.

Spelled makes delicious porridge, soup, sauces and desserts. From spelled flour - delicious pastries and breads with a light nutty taste. In almost any recipe made from wheat flour, the latter can be safely replaced with spelled flour in the same quantity: in muffins, pancakes, pancakes, sweet and snack pies.   • 1/4 tsp salt;
  • 50 g of chocolate;
  • 1/3 cup pitted cherries
  • 1/3 cup blueberries

The volume of the glass is 200 ml. Berries can be taken frozen or fresh. It is more convenient to use chocolate in the form of crumbs, drops-droplets, but you can also break a tile into small pieces.

For icing and dressing:

  • 50 g of chocolate;
  • 1 tbsp. l. odorless vegetable oil;
  • chopped nuts.

You can take black or milk chocolate for icing. Nuts - walnuts, hazelnuts, cashews or almonds, or assorted different types.

Grease the form with vegetable oil, you can cover the bottom with oiled parchment. I bake in a 24 cm round springform pan, and a cupcake pan with a hole or a rectangular cupcake pan of the appropriate size will work. We turn on the oven to preheat to 180 ° C.

Combine eggs and sugar in a bowl. Beat for 20-30 seconds with a mixer or simply shake with a whisk or spoon until lightly fluffy.

Add sour cream. Fat content does not really matter, both 10% and 20% will do. But if the sour cream is liquid, you may need a little more flour.

After stirring the beaten eggs with sour cream, add the melted butter. Stir again.

Sift the flour together with baking powder and soda. Soda is added because the dough contains a fermented milk product. The reaction of soda with sour cream will strengthen and improve the effect of the baking powder.

Pour almost all the flour into the dough and mix again. The thickness of the dough should be like very thick sour cream.

After adding the rest of the flour, pour in the chocolate chips, frozen berries and quickly but carefully mix them into the dough. You do not need to defrost the berries. If you use fresh cherries, you need to peel them in advance and hold them in a colander to drain the excess juice, and rinse and dry the blueberries.

Put the dough in a mold and put it in the oven.

We bake the cake for 30 minutes. For different ovens, the baking time can vary from 25 to 35 minutes, so we control the readiness of the cake by tasting the dough with a bamboo skewer. When it comes out of it dry, and the cake rises noticeably and acquires a brownish-golden color, the cake is ready.

After letting the cake cool in the form for a few minutes, open it, take out the pastries and continue to cool on the wire rack.

In the meantime, we are preparing the chocolate icing. Pour the broken chocolate into pieces into a small container, add a spoonful of refined sunflower oil and put in a water bath - another container with more water, which is on the fire. Heat, stirring occasionally, until the chocolate melts.
