3. Pumpkin "Yuchiki Kuri" - the best pumpkin for cutlets and pancakes

For the appearance of this variety, we should also be grateful to the Japanese, because this unusual tasty pumpkin was bred by Japanese breeders. Subsequently, the pumpkin "Kuri" fell in love in many parts of the world, where it became famous under various names.

In Russia, its seeds are often sold under the name "Golden Pear", other variety names: "Onion Pumpkin", "Orange Hokkaido", "Japanese Pumpkin", etc.

Pumpkin "Yuchiki Kuri", first of all, is notable for its unusual shape, reminiscent of a pear with a narrowed crown or a huge onion. The skin color is bright orange, sometimes small green marks can be found on the skin.

The bright orange pulp has a dense, dry consistency. The pumpkin tastes very sweet and does not at all resemble the traditional pumpkin either in taste or aroma, its peculiar taste can be called nutty. (The nutty flavor becomes more intense in the most ripe fruits). Sometimes this nutty flavor is characterized as "notes of roasted chestnut" which is why the name of pumpkin comes from ("Kuri" is translated from Japanese as "chestnut").

These pumpkins are portioned, the average fruit weight is from one to two kilograms. An unusual feature of the Yuchiki Kuri variety is that these pumpkins can be used directly with the peel, which will give the dish a brighter color and rich flavor. But, of course, it is not so easy to grind a rather dense skin on a regular grater; this will require a powerful blender.

This sweet little pumpkin is good for baking, and we love it as the main ingredient for vegetable cutlets or pancakes. The dry pulp does not add excessive moisture to the minced meat, and our food processor allows you to grind it along with the rind, which eliminates unnecessary work.

In cutlets, Yuchiki Kuri pumpkin is good in combination with potatoes, onions and carrots. And sweet pancakes are obtained by adding flour and eggs to the pumpkin, while pancakes from this pumpkin variety come out especially tasty precisely because of the original nutty flavor.
