Delicious pork with chickpeas and onions in the oven is a hearty lunch that you have to tinker with, but the result is worth it. It is good to cook chickpea dishes with meat for Sunday lunch, when there is time and a desire to feed the family something delicious. Don't forget to soak the chickpeas beforehand, you can simply leave the bowl of chickpeas in the refrigerator overnight. By the way, pork can also be marinated the day before to shorten the cooking time the next day.

Ingredients for pork with chickpeas and onions
- 750 g boneless pork;
- 300 g chickpeas;
- 200 g of onions;
- 4 cloves of garlic;
- 200 g of tomatoes;
- 100 g sweet bell pepper;
- 25 ml olive oil;
- salt, black pepper, soy sauce, spices;
- green onions for serving.

Soak chickpeas in cold water for 12 hours, it is advisable to change the water every 3-4 hours. Chickpeas are soaked so that, firstly, it cooks faster, and secondly, so that there are no problems with flatulence.

Put the soaked chickpeas in a soup pot, pour 3 liters of cold water, bring to a boil. Close the saucepan tightly and cook over moderate heat for 1.5-2 hours, salt to taste at the very end. Put the finished chickpeas in a colander.

Cut the pork into thick pieces across the fibers. We make pieces with a thickness of 2-2.5 centimeters. I advise you to choose the meat for this recipe with a small amount of fat, it will be juicier, and the dish will also turn out delicious if you cook it from a pork neck.

Do not beat the pork slices hard in any convenient way - with a hammer, a potato crush or an ordinary rolling pin. In the absence of such devices, even an ordinary flat stone will do.

Marinate pork - rub it with fine table salt without additives, a drop of soy sauce, ground black and red pepper and olive oil. Leave in the refrigerator for 30 minutes.

Cut the onion heads into thick rings, put them in the baking sleeve. Put the marinated pork slices on the onion pillow. We tie the sleeve on both sides not very tightly - if you make an airtight package, the sleeve will burst when heated.

We heat the oven to a temperature of 200 degrees Celsius. We bake the pork for 25 minutes on the middle shelf.

Meanwhile, while the chickpeas are boiling, we make the sauce. We crush the cloves of garlic with a knife, chop finely. Pour boiling water over the tomatoes, remove the skin, cut into cubes. We clean sweet bell peppers from seeds, remove partitions, cut into strips.

In hot olive oil, quickly fry the garlic, add chopped tomatoes and bell peppers, simmer vegetables for 10 minutes, salt to taste at the end and add the onion to the sauce, on which the meat was baked.

Put ready-made chickpeas in a deep frying pan, pieces of meat on it, put a tablespoon of sauce on each piece of pork, send everything to an oven heated to 230 degrees for 5-8 minutes. Sprinkle with green onions before serving.
