In this recipe for muffins, I propose an American version - small sweet muffins (sometimes savory, also delicious) based on a dough with sour cream with baking powder and soda - practical and quick food, a quick hostess will easily have time to prepare them for breakfast. By the way, English muffins are made from yeast dough, in my opinion, they are similar to brioche.

There are many varieties of muffins - with blueberries, with chocolate, just to name a few. In this recipe, a beautiful and tasty addition is multi-colored candied pineapple.

Ingredients for Candied Fruit Muffins

  • 250 g wheat flour;
  • 170 g granulated sugar;
  • 50 g fat sour cream;
  • 130 g butter;
  • 30 ml olive oil;
  • 3 chicken eggs;
  • 5 g ground cinnamon;
  • 25 g orange powder;
  • 150 multi-colored candied fruits;
  • salt, soda, baking powder, icing sugar.

Method for making candied fruit muffins

We measure out granulated sugar, break chicken eggs. Two large eggs for muffins are enough, three small ones. Mix eggs with sugar with a regular whisk. If you are cooking muffins in a food processor, then you can load the food into the bowl one by one and mix everything together, so to speak, in bulk.

Next, add the fat sour cream. It is important to put some fermented milk product into the dough - sour cream, kefir, yogurt, the acid of which, under the influence of high temperature, will react with baking soda. As a result, the baked goods will be fluffy.

Heat the butter in a water bath, when it melts, add the olive oil, pour the mixture into a bowl.

Then pour in sifted wheat flour, add baking powder (aka baking powder). Pour in natural flavors - ground cinnamon and orange powder.

We knead the dough for muffins, it does not need to be mixed for a long time, 2-3 minutes is enough for it to become homogeneous, without lumps of flour.
