Why cook nettles when there are so many "cultured" greens? And then, that the "burning thorn" in nutritional value is ahead of many of these garden crops.
Low-calorie nettle contains the entire range of substances necessary for the body: proteins, carbohydrates and fats. It contains such valuable substances as phytoncides and fiber, as well as flavonoids - compounds that are produced only by plants and are vital for the normal functioning of the body. Flavonoids act as antioxidants, are responsible for the strength and elasticity of blood vessels, and possibly help to stay young longer.
In addition, nettle is rich in micro and macro elements, various vitamins. Its ascorbic acid content is higher than in lemon - so eat nettles and your immunity will be at its best. Vitamin A will give keen eyesight. A friendly group of B vitamins normalizes metabolism. But with vitamin K you should be careful - it has the property of increasing blood clotting.
In total, there are several dozen types of nettles, but only the most common ones are suitable for food: stinging nettle and stinging nettle. The first is distinguished by a higher growth - up to 1-1.5 m, the second - lower, up to 60 cm, but it stings harder, for which it got its name. But do not be afraid of insidious villi - cloth gloves will protect you from them during the collection process, and so that the nettle does not sting your hands during cooking, the greens need to be doused with boiling water.

Well, if you, not knowing that nettle is not a harmful weed, but a tasty plant, have already weeded it all out, or you do not have a vegetable garden? Then we go to the forest or to the river bank. Nettle loves wet, shady places, so it thrives in wet undergrowth, in ravines, along the banks of rivers and streams.
After making sure that it is clean around, we put on garden gloves so as not to burn our hands on the prickly emerald beauty, and pluck the greens. Just do not pull out the whole plant by the root: only the tops of the nettle - rosettes of the first 4 leaves - are suitable for culinary use. Nettle tops can be harvested from early spring and throughout summer.
If you notice dandelions nearby, great, you can add the young leaves of these sunny plants to our pancakes. Fragrant dill and fresh parsley will perfectly fit into the company. If you are making a snack, an unsweetened version of pancakes, you can put the feathers of green onions, take less sugar, and a little more salt. In sweet pancakes that you plan to eat not with the first course instead of bread, but with tea, jam and honey, put more sugar, less salt, and do not add onions - only nettle, dill and parsley.
Ingredients for Nettle Pancakes
- 3 eggs;
- 0.5 l of kefir;
- 1 tsp baking soda;
- 1-2 tablespoons sugar;
- 1 / 4- 1/3 tsp salt;
- About 1.5 cups flour
- A bunch of nettles (100-150 g);
- A bunch of young greens (parsley, dill);
- Sunflower oil.
Making fritters with young nettles
First, let's prepare the greens. We put it in a bowl of cold water so that the dust and particles of earth from the leaves are soaked and sink to the bottom. After 5-7 minutes, carefully remove the herbs from the bowl and rinse them in a colander with running water. Nettle can be scalded with boiling water so that it does not "bite". And if you have the courage, you can cut it like that - in small doses it is even useful when the nettle stings (of course, if there is no allergy). Then put the herbs on a towel or napkin to dry a little, and start making the dough.
We mix the eggs with sugar: you can beat with a mixer, and if you want to quickly, shake it with a whisk or even just with a spoon: the pancakes are not as capricious in this regard as the biscuit.
Pour kefir into the beaten eggs. Pour in a teaspoon of soda without top and mix thoroughly. You don't need to extinguish with vinegar: soda reacts with a fermented milk product, and the pancakes turn out to be fluffy - see how many bubbles appear in the dough?
Now add 1 cup of flour to the dough - better sifted, to make the dough more fluffy.
Finely chop the herbs.
Mix, sift a little more flour (about 1/4 cup) of flour into the dough and add the chopped greens.
Mix the dough again until smooth. If it's thin, you can add more flour to the desired consistency.
We heat the sunflower oil well and pour the dough into a hot pan with a spoon, forming round pancakes.
