Making the perfect burger at home is not difficult at all. The most important thing in this business, of course, is the cutlets. I will show you how to make burger patties and collect delicious filling.
There is one secret burger ingredient that is neglected by many because of its simplicity and affordability, and it plays an important role in the flavor palette of this dish. These are pickled onions. Marinating onions is very easy. First, cut the onion into thin rings, then put it in a bowl, add a teaspoon of sugar and the same amount of salt, rub gently with your hands. Pour a glass of boiled cold water and add 2 tablespoons of 9% vinegar, leave in the marinade for 30 minutes. We take it out, dry it on a paper towel - the required ingredient is ready!

Ingredients for the perfect burgers:
- 1.5 kg of lean pork;
- 100-150 g lard;
- 150 g of stale white bread;
- 100 ml of milk;
- 150 g of onions;
- 10 g ground dried spices for cutlets;
- black pepper, vegetable oil, salt.

- mustard seeds, mayonnaise or ketchup.
How to make perfect burgers
Cut the lean pork into small cubes. Films, tendons, veins are carefully cut off. Add about 150 g of lard to the meat; without it, the cutlets will be dry.
We pass the meat with lard through a meat grinder, the minced meat for the burger should turn out smooth, so choose a nozzle with fine holes.
Peel the onions, chop, grind in a meat grinder after meat.
Cut off the crust from the stale loaf, cut the crumb into cubes, mix with cold milk.
Add the bread soaked in milk and chopped onions to the bowl to the minced meat.
Season the minced meat - add freshly ground black pepper, salt to taste and ground dried herbs (seasoning for cutlets).
Mix well the minced meat for the burger. It is better to knead it with your hands, just like the dough. Then we remove the finished minced meat for 30 minutes in the refrigerator compartment.
Next, you need a kitchen scale to make the perfect cutlets. In this recipe, I cooked very large burgers (king size), so I took 180 g of minced meat per serving.
We measure out the required amount of minced meat, sculpt flat round burger patties, put them on the board.
In a frying pan, heat a tablespoon of odorless refined vegetable oil. Quickly fry the patties on each side until golden brown, transfer to a baking sheet.
We send the baking sheet into an oven heated to 180 degrees for 12 minutes.
Now you can pick your burgers
So, heat the burger buns in a toaster or oven, grease the bottom half with grain mustard, put a lettuce leaf, a few basil leaves and a tomato circle on top. Put a thin slice of processed cheese on a hot cutlet, put everything together on a tomato. Add pickled onions, cucumbers, some more herbs, mayonnaise or ketchup and the second half of a warm bun. By the way, so that the burgers do not fall apart, when serving, fasten them with bamboo skewers. You can string pieces of pickled cucumber, onion rings and chili on a skewer.
