Baked accordion potatoes in foil - an original recipe for cooking ordinary potatoes with ham or bacon. It would seem that what could be simpler than potatoes with pork, and how to prepare an elegant dish from these ordinary products? The secret is simple - a large tuber of potatoes, delicious ham or smoked pork belly, spicy herbs - rosemary and oregano, a small piece of edible parchment and foil. You will also need two chopsticks of the same thickness, preferably wooden ones such as Chinese chopsticks. I indicate the ingredients per person, if you cook for a large company, then increase the number of potatoes and other ingredients by the number of suffering mouths.

Ingredients for Baked Accordion Potatoes with Ham
- 1 large potato (approx. 150 g)
- 45 g fat ham;
- 2 g smoked paprika;
- sprig of rosemary;
- a pinch of oregano;
- 10 ml extra virgin olive oil;
- 15 g of hard cream cheese;
- 2 g of sea coarse salt.
Method of cooking baked accordion potatoes with ham
Peel the potatoes, cut them off on one side so that the lower part becomes flat.
Put two sticks on a flat board, between them place the potatoes with the flat side down. We take a sharp knife, cut it strictly perpendicular to the surface, make cuts in increments of about 5 millimeters.
The knife will cut through the potatoes only up to the sticks, the lower part will remain intact, and the cut petals will turn out on top.
Take chilled fatty ham, it is advisable to hold it in the freezer for about half an hour before cooking. We cut the ham very thinly, the slices should be no more than two millimeters thick.
We insert slices of ham between the potato slices - our potato begins to resemble an open accordion.
Take a small sheet of waxed parchment, put potatoes with ham, pour over with extra virgin olive oil.
Then add seasonings and spices - sprinkle with coarse sea salt, ground smoked paprika, oregano and put a small sprig of rosemary.
Lift the edges of the parchment, fold the two wide edges together, then twist the narrow edges along the sides like candy.
Fold the food foil in two layers. We wrap our potato "candy" tightly in foil.
Preheat the oven to 190 degrees Celsius. We bake the potatoes for about 40 minutes, depending on the size, and most importantly, on the thickness of the tuber. Meanwhile, cut the hard cream cheese into thin slices.
Then we take out almost finished potatoes (we do not turn off the oven), unfold the packaging, put cheese blocks on the potato slices. We put the opened package in a hot oven, bake for several minutes until golden brown.
As soon as the potatoes are browned, and this will take 4-7 minutes, we take them out of the oven and serve them hot, hot and hot.
Tip: to prepare several servings, cut off a wide piece of foil, then parchment, put everything on a baking sheet at once, lay out the accordion potatoes, pack the potatoes first in a wide parchment envelope tightly, then cover everything with foil.
