Have you tried the most spring salad? No, we are not talking about "Mimosa" - it is spring only in design, but not in composition. And not even about the first greens - spinach, lettuce and all other "grass" is better to buy not in early spring - there is a risk that there are more nitrates than vitamins - and later, when ground greens appear. And pure, real, the first greens for the healthiest salad can be found … in the forest! Have you guessed? Of course, it is wild garlic or bear onion.
Why such a name? But because for sleepy hungry bears, wild garlic is the best breakfast after hibernation! There are no berries yet, but vitamin greens after winter are useful even for a bear. And you try - the taste is much brighter than homemade green onions grown on the windowsill or in the garden. Although forest garlic can be grown in your garden.
And if you collect wild garlic in the forest, be careful not to confuse it with lily of the valley leaves - the shape is very similar. But it is easy to check whether the wild garlic is in front of you: just rub the leaf - the characteristic garlic aroma is immediately recognized.
Bright, swift, like green arrows, wild garlic leaves make their way through last year's foliage and reach for the spring sun. Prepare a salad with wild garlic - and the irrepressible energy of spring nature will charge you too!
Ingredients for wild garlic salad
- A bunch of wild garlic;
- 1-2 eggs;
- 2-3 tablespoons of sour cream;
- Salt to taste.
Cooking wild garlic salad
Since the stems of wild garlic are cut off the ground, they must be thoroughly rinsed before cooking. First, put the leaves in a bowl of cold water for five minutes. Do not drain the water, but catch the wild garlic - and you will see that particles of earth from the leaves have settled at the bottom of the bowl. Now thoroughly rinse the leaves in running water.
Then the wild garlic must be peeled. See, each stem is "dressed" in a translucent case? This cover must be removed, and the leaves themselves will go to the salad. Arrows with buds can also be eaten.
Boil a hard-boiled egg, peel and cut into cubes. We also finely chop the greens. Optionally, you can add to the salad from wild garlic and other greens: onion feathers, a couple of sprigs of dill, parsley - but not necessarily, wild garlic is tasty and healthy in itself. And its bright taste will overshadow all other components.
We mix products in a salad bowl, salt, season with sour cream.
Serve the spring salad freshly prepared to get the most out of it. The salad with wild garlic goes very well with mashed potatoes, a side dish of rice, or you can eat a plate of salad and just with bread.
