Vegetarian cake made from sweet yeast-free dough prepared on the basis of strongly brewed tea with a layer of fresh fruit, dried apricots, raisins and nuts. An incredibly tasty and healthy vegetarian dessert that is very easy to prepare. The lean cake recipe will appeal not only to vegetarians, but also to those whose family celebrations coincide with fasting.
The dough with peanuts, cinnamon flavor and Earl Gray tea will turn out lush, despite the fact that there are no eggs, no dairy products or yeast in it. Plain baking soda, vinegar, and oven heat work wonders with wheat flour. Fatty cream based on butter or sour cream will replace ripe fruits and dried fruits. Wash thoroughly and soak dried apricots with raisins in boiled water for 1-2 hours so that the layer is moist.
This recipe's veggie fruit and nut cake can be refrigerated for 2-3 days.

For the test:
- 200 g wheat flour;
- 155 g granulated sugar;
- 60 ml olive oil;
- 200 ml of water;
- Earl Gray tea bag;
- 5 g of baking soda;
- 15 ml vinegar;
- 5 g ground cinnamon;
- 70 g roasted peanuts;
- salt.
For interlayer and decoration:
- 1 banana;
- 2 tangerines;
- 60 g dried apricots;
- 60 g raisins;
- 100 g of walnuts;
- 50 g almonds;
- 30 g honey;
- powdered sugar.
Method of making a vegetarian cake with fruits and nuts
Brew a bag of Earl Gray tea, add granulated sugar, stir and leave to cool down to room temperature.
Add extra virgin olive oil to the tea with sugar, add a small pinch of unadulterated salt to balance the flavors.
Mix the sifted wheat flour with soda, add the mixture to the liquid ingredients gradually, mix, the dough should be smooth, without lumps.
Grind the fried peanuts in a mortar or press with a rolling pin so that small pieces of peanuts remain. Add ground cinnamon and peanuts to the dough.
Pour 6% vinegar into the finished dough, mix thoroughly. At this point, the oven should already be heated to 180 degrees Celsius.
Cover the detachable form with baking paper greased with vegetable oil, spread the dough in an even layer.
We put the form in a hot oven for 30 minutes. We check the readiness of the baking with a wooden stick - the stick stuck in the center of the cake should remain dry, without adhering dough.
We mix the ingredients for the layer. Cut a ripe banana into small pieces, add raisins and dried apricots pre-soaked in boiled water, peeled tangerines. Add walnuts and almonds.
Add a layer of honey to the ingredients, grind everything in a food processor until a homogeneous gruel is obtained.
Divide the cooled cake in half. Apply a layer on the lower part with a thick, even layer.
Cover the cake with the second crust and put it in the refrigerator for 2-3 hours to soak.
Decorate the top of the vegetarian cake with almonds and walnuts, and sprinkle with powdered sugar.
