Lean pizza with broccoli and tofu is a hearty meal for those who fast or for some reason refuse to eat animal products. Believe me, pizza with vegetables prepared according to this recipe turns out to be delicious and it is not a fact that meat pies can compete with it.

Instead of meat - broccoli, instead of cream cheese - tofu, dough without milk and eggs, these are the most important key points of this recipe! Homemade lean pizza with broccoli and tofu will turn out to be much tastier, cheaper and, most importantly, healthier than the one that will be delivered within an hour.

Ingredients for lean broccoli and tofu pizza
For the pizza dough:
- 275 g wheat flour;
- 165 ml of warm water;
- 17 g fresh yeast;
- 30 ml extra virgin olive oil;
- 2 g fine salt.
For pizza toppings:
- 250 g frozen broccoli;
- 100 g cherry tomatoes;
- 50 g of onions;
- 80 g carrots;
- 65 g tofu cheese (hard);
- 15 ml olive oil;
- salt.
How to make lean pizza with broccoli and tofu
Making vegetable pizza filling. Cut large broccoli inflorescences in half, leave small ones intact. Put the cabbage in boiling salted water, cook for 5 minutes, then immediately transfer it to cold water to stop the cooking process and keep the color. Place the cooled broccoli on a sieve.

Grease the pan with oil, fry the finely chopped onion and carrots grated on a coarse grater until soft, salt to taste.

Cut the cherry tomatoes in half. You can lightly fry the cherry next to the onions and carrots, but this is not necessary.

Making pizza dough. Sift wheat flour into a deep bowl, mix with fine salt.

Dissolve fresh yeast in warm water (30-35 degrees). We make a well in flour, pour in the dissolved yeast.

Mix liquid and dry ingredients, pour extra virgin olive oil.

Knead the dough with your hands until it stops sticking to your fingers (5-8 minutes is enough). Cover the bowl with a clean towel, put it in a warm place.

When the dough has increased by 2-3 times, and this usually takes 45-60 minutes at room temperature, we knead it - "blow off the carbon dioxide."

Sprinkle the working surface with wheat flour, roll out a round cake about 7 millimeters thick. We transfer the cake to a dry, clean baking sheet, form a small side with our fingers.

We spread the evenly cooled filling. First, fried carrots with onions, then add the blanched broccoli inflorescences.

Add cherry tomatoes cut in half. Put the tomatoes cut down - in the oven the cherry juice will flow onto the dough and replace the ketchup.

Rub hard tofu cheese on a coarse grater, sprinkle with vegetables.

Pour olive oil over the pizza. We turn on the oven to heat up to 220 degrees Celsius.

We put the baking sheet in a hot oven, bake for 15 minutes. Then immediately remove from the baking sheet and serve the lean pizza with broccoli and tofu to the table hot.
